| The research was to combine the modified atmosphere packing(MAP) with different gases under low temperature on the lotus roots.The physical,chemical and physiology changes of lotus root during storage were investigated,while dividing three groups by different concentration of gas:CO,CO2,CO2/O2.Analyze from the side of microbiology to find out the inflation cause of lotus root with MAEFirstly,in the group with CO,it can better inhibit the PPO activity,slow down the browning velocity of lotus epidermis,the brightness from 68.64 to 53.73;and a passive modification of the atmosphere was developed,the respiration intensity dropped from 62.81 mgCO2/kg·h/kgoh to 5.75 mgCO2/kg·h.The trend of rudcing sugar has obvious ascending trend,the content from 0.50μg to 0.50μg.The activity of PPO falls during storage.The activity of PPO 30%CO2 changes more fast than other treats,and it is coherent with the variety of brightness.Together with other indexes and correlation analyzing,the treat with 30%CO2 has the best effct on the lotus root with MAP.The relationship of the activity of PPO with the brightness of lotus root and lotus epidemis is minus correlation and the values are 0.999 and 1.000,using 5%CO2/3%O2.Considering all indexes,it has the best effct with 5%CCh/3%O2 on the lotus mot.Then,the inflation reason was studied from the microbiology.Four bacillises and nine yeasts were isolated from the inflated bags of lotus root.It showed that six yeasts were the reason for inflation bags in counterevidence experiments.At last,the inhibiting experiments were done by different inhibitors.The results:sodium benzoate with the concentration of 0.10%has better effct on years A,B,C and G;Potassium sorbate concentration of 0.10%has better effct on years on yeast D and H. |
