Orange juice has taken up the largest market of fruit drink consumption, and in China, the industry of orange juice processing drops far behind America and Brazil. China is in the face of a enormous potential market, but limited producing orchards for orange juice processing and little know about the varieties which are optimal for juice processing, are the main blocks that disturb the industry of orange juice processing in China. In this research, a systematical analysis on quality was dealed with several varieties of sweet orange, owing to that, we selected the optimal sweet orange cultivars for juice processing. In relation to different mature periods, suitable combinations were selected.The study was performed by qualitative and quantitative analyses of Vc, "Delayed Bitterness" components, sugars, organic acids and aroma components in the Sweet Orange (Citrus sinensis (L.) Osbeck) cultivars fruits by high performance liquid chromatography (HPLC), gas chromatography (GC) and gas chromatography-mass spectrometry (GC-MS). The main results were as follow:1. Comprehensive analysis and evaluation of processing quality in Zigui's Valencia Sweet Orange fruitsSix Valencia Sweet Orange cultivars were selected, comprehensive analysis and evaluation of processing quality showed: Delta and Cutter possessed of high-level juice ratio, suitable ratio of sugar/acid, low-level bitterness and rich-aroma were the best cultivars for the orange juice processing; Rhode Red and Olinda had the perfect qualities as well, but they had the lower production per 667m than Delta and Cutter, and, Campbell and Frost were the lowest. In addition, we found the suitable date for harvest: late April to Mid-May was the suitable date for Campbell, Delta and Frost were in Mid-May, Cutter was in Mid-May to late May, Olinda was in Mid-June to late June, Rhode Red was in late June. 2. Comprehensive analysis and evaluation of processing quality in Sweet Orange fruits of different regionsAccording to the result of analysis and evaluation we obtained: some cultivars could not be used for orange juice processing because of their low juice ratio, such as Taoyecheng Sweet Orange, Early Gold Sweet Orange, Bingtangcheng Sweet Orange and Pushi Sweet Orange, but they could be utilized as auxiliary processing materials; GuichengNO.1 Sweet Orange and Jincheng Sweet Orange had high-level "Delayed Bitterness"; Xingshan's Rhode Red and Delta Valencia Orange had meet the requirements for processing qualities, but they should be processed together with rich-aroma cultivars eg.Taoyecheng Sweet Orange; Guangxi's Midknight and Olinda Valencia Sweet Orange were optimal orange juice processing cultivars. In addition, through the research we found the suitable date for harvest: Midknight and Olinda Valencia Sweet Orange were in late May, GuichengNO.1 Sweet Orange was in early January, Jincheng Sweet Orange was in early April, Xingshan's Rhode Red and Delta Valencia Sweet Orange were in Mid-June.
