Porous starch is a new type of modified starch, as the absorption material, its high-performance, non-toxic, safe, biodegradable made it the focus of domestic and foreign experts and scholars. With widly research and development of Porous starch, it has been widely used in food, medicine and public health, agriculture, daily-use chemical industry.[0] In this study, corn starch as raw material, Pretreatment of raw materials[0] of the porous starch preparation, and the porous nature of the application of starch were studied.The main post-mortem results are as follows:1 Study on process parameters of pre-treatment of corn starchThrough single-factor test, studied the effect of heat processing conditions of corn starch on the sensitivity to enzyme targets, and determined conditions[0] of heat processing of corn starch by orthogonal. The results show that the major influencing factor of heat processing of corn starch is heat treatment temperature, the secondary influencing factor is initial moisture content of the starch,the influence of heat treatment time is the smallest. The optimum conditions are:starch moisture content is 30%(w/w), heat treatment temperature is120℃, heat treatment time is 4h, the sensitivity of amylase to heat processing starch which is processed under these conditions is 9.23%.2 Study on process parameters preparation of porous starchThrough ingle-factor experiment, studied the effect of the ratio ofα-amylase and glucoamylase, starch slurry concentration,adding amount of enzymes, reaction temperature, reaction time, pH value of reaction system on the absorption of porous starch. Based on the single-factor test, determined processing conditions of porous starch peparation by test. The results show that the major influencing factor of enzymatic preparation of porous starch is reaction time, the secondary influencing factor is pH value of reaction system, the influence of starch slurry concentration is the smallest; the optimum conditions are that the ratio ofα-amylase and glucoamylase is 1:2, starch slurry concentration is 50%, adding amount of enzymes is 2.0%, reaction temperature is 50℃, reaction time is 20h, pH value of reaction system is 4.5. The absorption rate of porous starch prepared under these conditions is 87.35%.3 Study on properties of porous starchCompared with corn starch and heat-miosture treatment starch, porous starch has a higher rate of water absorption and oil absorption,higher dissolution rate and swelling rate,higher transmittance rate, lower packing density.Starch was hydrolysised by the enzymes to obtaine porous starch, the surface of which is covered with small holes. The holes have small aperture. Porous starch granules were honeycomb. The porous starch obtained by hydrolysis is also A type pattern.4 Study on the application of porous starchUsing porous starch as the wall material, the microencapsulation conditions of grape seed oil were optimized by general secondary rotation test which is based on the single-factor test. The optimum microencapsulation conditions wre as follows:the ratio of core products material and wall material is 2.9:1, the embedding time is 58min, the embedding is 50℃, the embedding rate of grape seed oil prepared under these conditions is 30.31%, and the grape seed oil has good oxidation resistance.The model established by the mathematical regression can predict the embedding rate of grape seed oilaccurately.
