| Deoxidizer content and it's proportion will have a direct impact on the start-up speed,deoxy-rate and cost of the product.In this study,we take iron series Deoxidizers as research objects.According to the different components,do search on three types of Deoxidizer:dependent water form, automatic forth and double absorption form;Using orthogonal experimental design method to select the optimized formulas:Packing with material of low venting quality and adding deoxidizer were applied to inhibit rancidification of cakes during storage.1.By carrying out orthogonal test on deoxidizer proportion L9(34) of dependent water form and through Range analysis,we can see from the R value:among iron series Deoxidizers components, activated carbon(B) play a major role in terms of the deoxy speed,followed by kieselguhr(C),the final sodium NaCl(A).Influence factors sequence:B>C>A.The best combination of this deoxidizer is AlB2C2,that is,the best formula is iron powder:NaCl:activated carbon:kieselguhr =1.00:0.20:0.15:0.35,reaching a minimum deoxidization speed:9h.2.By carrying out orthogonal test on deoxidizer proportion L9(34) of and automatic form through Range analysis,we can see from the R value:among iron series Deoxidizers components, activated carbon(E) play a major role in terms of the deoxy speed,followed by Na2CO3·10H2O(F), the final KBr(D).Influence factors sequence:E>F>D.The best combination of this deoxidizer is D2E2F3,that is,the best formula is iron powder:KBr:activated carbon:Na2CO3·10H2O=1.00: 1.20:1.00:1.10,reaching a minimum deoxidization speed:5h,obviously accelerated 1g of iron reaction rate. 3.By carrying out orthogonal test on deoxidizer proportion L9(34) of double absorption form and through Range analysis,we can see from the R value:among iron series Deoxidizers components,graphite(H) play a major role in terms of the deoxy speed,followed by CaO(I),the final NaCl(G).Influence factors sequence:H>I>G.From K value,he best combination of this deoxidizer is G1H2I2,that is,the best formula is iron powder:NaCl graphite:CaO = 1.00 0.004:0.20:0.06,it's deoxidization speed is:30.5h,compared with dependent water form and automatic form,obviously reduces 1g of iron reaction rate.However,this deoxidizer is double absorption form,not only deoxy but also absorb carbon dioxide.4.Through the storage test adding the three types deoxidizes used in cakes,analysis and detection of its acid value,peroxide value,the total number of bacteria and the sensory evaluation, the study found that,in the storage process,the cake acid value adding deoxidizer were lower than the control.Peroxide value and the total number of bacteria were lower than the control' s too.Sensory evaluation is higher than the control' s.Deoxidizer has significantly inhibiting effect for cakes.Deoxidizer can prolong storage period for cakes.Comparing fresh-keeping effect and storage period of cakes of Three types Deoxidizers,we found the sequence of inhibiting cakes defeat:dependent water form>automatic form>double absorption form.Cakes acid value is 5.94mgKOH / g oil sample,5.74mgKOH / g oil sample,6.10mgKOH / g oil sample respectively after 15d,9d,6d,when adding Deoxidizer of the three types;peroxide values are 20.83meq/kg, 20.46meq/kg,21.15meq/kg;total bacteria were 2.35×103 months / g,2.46×103 months / g,2.59×103 months / g.Therefore,the best storage life is 15d,9d and 6d to add Deoxidizer.Choosing Deoxidizer of dependent water form can get the best result(Fe powder 1.00g,NaCl 0.20g, activated carbon 0.15g,kieselguhr 0.35g)for cakes storage.5.This test for low temperature,opacity Deoxidizer are also involved.The results showed that in the storage,the acid value,peroxide value,the total number of bacteria were significantly affected by storage temperature.Opaque packaging has big impact on acid value and peroxide value,but has almost no impact on the total number of bacteria.Being in the same period,the four indicators are all showed low temperature,opacity packaging have better effect on cakes fresh-keeping.Cakes Deoxidizer(Fe powder 1.00g,NaCl 0.20g,activated carbon 0.15g,kieselguhr 0.35g) packaging,in the 4℃,non-transparent,has best effect on Inhibiting oxidation. |
