This paper introduces the cultivation of Chinese mitten crabs around the areas of Yangcheng and Taihu Lakes and their economic value. The crabs are affect by environmental pollution during the cultivation and that may lead to some quality issues. This article focused on the effect of heavy metals specially on lead in the environment to the crabs. Lead in the soil was determined to assess whether they would cause the harm to the crabs.Yangcheng and Taihu Lakes are the main original producing area of Chinese mitten crab, which is very important for local economy as the characteristics aquatic product. In recent years, according to a number of negative publicity occurred in Hong Kong, Macao and Taiwan, the Yangcheng and Taihu Lakes have been seriously polluted, including the heavy metals exceeding, so the crabs are also polluted. All of these problems affect the saleroom of the crabs in these places to a certain extent.In order to accurately confirm whether there is heavy-metal pollution or the pollution level, the authors got the samples from the sampling points around the Yangcheng and Taihu Lakes. Pb was extracted from the samples with 5% HNO3, and detected with ICP-AES. Our purpose is to look into the environment that potentially affects Chinese mitten crab's growth. The conclusion shows that Pb in the soils of the two lakes is below the scope limited by GB/T18407.4-2001. From this aspect, the Chinese mitten crab's quality is well assured.
