The influence of different dilute water on beer taste and quality was researched in this paper, the final product was 8°P beer which was diluted with 13.5°P beer mainly. The influence of different ions in dilute water on beer quality was investigated. At the same time, the preparation of dilute water in practice was discussed.It was found that there were obvious differences between sensory evaluations of final beer, which were diluted from the same high gravity beer with different ion content diluting water. After several representative flavor compounds analysis by SPSS date processing software, it was concluded that the beer flavor and its mouth-feel information could be better shown by determining the indexes of organic acids, high alcohols, esters and inorganic ions. The ion content was an important complementary for the beer favor and mouth-feel evaluation. When the diluting rate was fixed, diluting water was the most effective method to decorate the mouth-feel of beer.The optimal contents scale of the ions in the better diluting water were confirmed as follows: K+ 4.5 mg/L, Mg2+ 1.84 mg/L, Na+ 12.11 mg/L, Ca2+ 6.05 mg/L, Cl- 39.26 mg/L, SO42- 9.98 mg/L, and its conductance was 0.197 mS/cm. The optimal contents scale of the ions in the 8°P final beer diluted from high gravity beer of 13.5°P were as follows: Cl- 35-41 mg/L, SO42- 32-34 mg/L, Zn2+ 0.2-0.3 mg/L, K+ 68-70 mg/L, Mg2+ 28-30 mg/L, Na+ 29-31 mg/L and Ca2+ 9-11 mg/L, respectively.It was concluded that the cost of reverse osmosis water was rather relatively low, and its cost was only 1/2-1/3 of the ion exchange water after comparing the preparation cost of two kinds of diluting water. Moreover, the floor space of the apparatus was small, and it was easy to operate. Its operation cycle was long, and basically had no pollution. Furthermore, the reverse osmosis treatment was better than the ion exchange technology in the quality of diluting water. Not only the desalination was good in the reverse osmosis water with the satisfied conductive rate, but also the organic matter, bacteria and so so in the water could be removed.
