| China is the largest egg products exporting country in the world. The proportion of shell duck egg products in national agricultural product exports as a whole, including fresh duck eggs, preserved duck eggs, raw salted preserved duck eggs and cooked salted preserved duck eggs, has risen increasingly. However, food-borne safety events related with shell duck egg products and caused by salmonella disease occur continually in recent years. As the authorities concerned of the importing countries pay more and more attention to the safety issues of egg products, China's egg product exporting is hindered from time to time.This dissertation concerns the safety control practices of shell duck egg production for the exporting purpose. Through the survey and analysis of farm production, collecting and transporting, and plant processing, within the theoretic framework of food safety process control, and in view of the characteristics of salmonella disease occurrence and spreading, the dissertation is intended to formulate the GAP for fresh duck egg farm production, collection and transportation, the GMP for duck egg processing plants and SSOP. On this basis, the dissertation further formulates the HACCP system for the production of fresh duck eggs, preserved eggs and cooked salted preserved eggs, and hence form a 'farm-to-table' safety system for salmonella disease control in the production of shell duck eggs for the exporting purpose. |
