Spices are important in everyday life. However, the disadvantages, little solubility,high volatilization,oxidation,instability with light, limit their use. The peculiar molecule structure of MCT-β-CD can encapsule kinds of guest molecules selectively. The inclusion complexes are relatively stable, improving solubility and stability of guest molecules. In this paper, MCT-β-CD was used as host molecule, and vanillin, coumarin, thymol, benzoin as guest molecules. The inclusion process of solid complexes was investigated. The inclusion behavior between MCT-β-CD and guest spice molecules was studied by ultraviolet spectrometry (UV).In this paper, solid inclusion complexes MCT-β-CD/vanillin, MCT-β-CD/coumarin, MCT-β-CD/thymol, MCT-β-CD/benzoin was formed. The inclusion behavior was investigated. The structure of solid inclusion complexes were characterized by IR, DSC and XRD. The result indicated that spices molecules disperse in cavity of MCT-β-CD as amorphous state. the inclusion complexes of molar ratio vanillin,coumarin,thymol,benzoin were 42.73%,77.68%,40.06%,62.51% respectively. The experiment of solubility of inclusion complex indicated that the solubility of inclusion complexes increased 22.83-fold for vanillin, 131.6-fold for coumarin, 9.548-fold for thymol, and 30.85-fold for benzoin. The inclusion behavior,inclusion ratio,stability constant of MCT-β-CD of different defgree of substitution and four kinds of spices were investigated. It was found that MCT-β-CD and spices can form soluble inclusion complexes with molar ratio of 1:1. The stability constant is depend on dimension matching of host and guest molecules, the degree of substitution of host molecule, and dimensional structure of guest molecule. The inclusion stability constant of MCT-β-CD(DS=3.238) and Stability constants were 697,1296,618,932 respectively.
