The characteristics of Trachypenaeus curvirostris and Penaeus shrimps preserved at 4℃were studied.The results showed that the changes of TVC,TVB-N,sensory-assesment and microflora of spoilage of them are different. Trachypenaeus curvirostris has a lower TVC and T-VBN, but it is more ease to become melanosis than Penaeus shrimps. The sepecific spoilage organism of Trachypenaeus curvirostris were Shewanella and Pseudomonas. The sepecific spoilage organism of Penaeus shrimps were Aeromonas and Pseudomonas.Electrolyzed Oxidizing Water (EO water) were used to be a manner of pretreatment to reduce the total bacteria of shrimps.It can improve the sensory aseesment of shirimps by preventing melanosis.The EO water which had pH of lower than2.5,ORP≥1140mv,free chlorine concetration≥70ppm can reduce tha TVC of shrimps by 2.0 log cfu/g. Dipping into EO water with the same weight, keep it in for 10mins can acquire the best results.The anti-micro activity of chitosan on the surface bacteria of shrimps with different molecular weight at different concentration were studied . Penaeus shrimps were preserved by this kind of chitosan. The characterisitics of Penaeus shrimps during preserved by chitaosan.The microflora of spoilage were isolated and identified. The results showed that chitosan can prolong the shelf life of shirimps by about 72 hours and it also changed the composition of spoilage micoflora.The anti-micro acitivity test results showed that chitosan had different antiactivity on different spoilage bacteria.More research about the melanosis of Trachypenaeus curvirostris.Chitosan , 4-hexylresorcinol, phytic acid and EDTA were used to make a new kind of preservatives .The composition of this preservatives were studied by orthogonal experiment. Orthogonal experiment results showed that this formulation can get the best quality of Trachypenaeus curvirostris. After preserving with this formulation ,the characterisitics of Trachypenaeus curvirostris were improved.It can prevent melanosis of shrimp by 96 hours and prolong shelf life by 72 hours.
