The paper is one part of project-"Research of papaya at modified atmosphere packaging technology and development of equipment"which is included in the"Zhuhai Science and Technology Plan". We used Guangdong's famous"Hawaii"papaya to carry out experiments employing the modified atmosphere packaging equipment. Compared with the unpacked papaya's quality,the ordinary packed papaya's quality, we research the effects of the different initial concentrations of gas and different storage temperatures on the quality of papaya,respiration rate,life of papaya and so on. The results show:1. Compared with the unpacked papaya,the ordinary packed papaya: under the conditions of low oxygen and high carbon dioxide, MAP reduces respiration,the decomposition of the pigment,the water loss,fruit rot and maintains the content of soluble solids,the pH value,the content of vitamin C,firmness . So MAP enhances the commodity value and extends shelf life.2. On the basis of the modified atmosphere packaging, temperature also plays a key role in maintaining the quality of papaya and life of papaya. the balance gas concentration of modified atmosphere packaging is O2 4.2%~4.9%,CO2 7.3%~7.9%. The best gas concentration of modified atmosphere packaging is 3%O2, 9%CO2, 88% N2.When using technology of modified atmosphere packaging, papaya's respiration rate is 0.2~0.4ml/(kg·h)CO2 at room temperature. Papaya's life is extended to 21 days under low temperature.3. In production practice, because of considering the economic efficiency, unifies this experimental the result, we suggested the initial concentrations of gas in the preservation process: 3%O2, 9%CO2,88%N2; the temperature at storeage: 18℃.4.
