With the globalization and the internationalization of food trade, food safety has become a global challenge and an important public health problem. All of the world has begun to focus on animal food safety, wherein the residues of animal medicine is one of the most important factors that influence animal food safety. Therefore, more and more attention has been paid to the subject of food analysis. Along with the progressive development of the subject of food analysis, analysis method is demanded to have higher sensitivity, better accuracy and the smaller amount of sample, and to be more rapid to meet the requirement of modern food residue analysis. Among analysis methods, fluorescence spectrometry is an optical method based on measurements Fluorescence Characteristics of the analyzed material to determine its concentration or amount. Because of the rather higher sensitivity, it has been widely used in food analysis and inspection. Electrochemical analysis is an electrochemical method based on the selectivity of ion-selective electrode to determine the quantity or concentration of the measured material. With its high accuracy and the speed of analysis, it is also given much importance and widely applied in food analysis. In this paper, reviewing status about rapid detection of antibiotic residues in milk, meat products, a new fluorescence analysis and a new electrochemical analysis are established and applied into the rapid detection of the antibiotic residual.1. Progression of rapid determination of antibiotic residues in milk and meatIn this part, the author briefly reviewed and summed up more than 10 years of domestic studies in rapid detection of antibiotic residues in milk and meat. In a simple method, further proposed her own research thesis.2. The study of fluorescence characteristics of ciprofioxacin and levofloxacinCiprofloxacin and levofloxacin are the third generation of fluoroquinolone which are widely used in animal drugs, due to play a good role with infections on the respiratory tract, urinary tract, intestinal and skin soft tissue, with wide antibacterial spectrum, powerful action, and without cross-resistance between various antimicrobial agents. But the residues can cause hidden danger to the human health and life safety; therefore it has become one of the important determined items in food inspection. In Determination of its content, HPLC and spectrometry are major adopted methods. Unfortunately, HPLC has higher cost, more background interference and spectrometry the lower sensitivity. In recent years, studies on fluorescence spectrometry determination of trace antibiotics have been successively reported, but their sensitivity is not high. The author found out that suffactant has a notable enhancement to characteristic fluorescence sensitivity of ciprofloxacin and levofloxacin, accordingly established a new fluorescence spectrometry determination of ciprofloxacin and levofloxacin. This method has high sensitivity for the determination of ciprofloxacin and levofloxacin in the tablet, ointment and injection. In comparison with the standard method, the results are satisfactory.3. The study on rapid determination of ciprofloxacin and levofioxacin residues in milk, meat.(1) CTMAB sensitized fluorescence determination of ciprofloxacin residues Ciprofloxacin is fluorescent material, but the fluorescence intensity is very weak. When Al3+ is added to the system of ciprofloxacin (CPFX), the fluorescence intensity would be enhanced. In the study of surfactant effect on the fluorescence properties of CPFX-Al3+, it is observed that in hydrochloric acid-sodium citrate medium, where surfactant Cetyl Trimethylammonium Bromide (CTMAB) exists, the fluorescence of CPFX-Al3+ system can be significantly enhanced. Thereby a new rapid method of CTMAB sensitized fluorescence determination of ciprofloxacin residues was established and obtained satisfactory results in the determination of animal serum and milk.(2) SDS sensitized fluorescence determination of ciprofloxacin residuesIn a buffer solution of pH=5.5, Sodium laurye sulfate (SDS) has a marked enhancement to the sensitivity of levofloxacin, as a basis. We established a new method of SDS sensitized fluorescence determination of ciprofloxacin residue and obtained satisfactory results.4. Preparation of selective electrode with levofloxacinThe levofloxacin selective electrode prepared by coating the mixture of levofloxacin and sodium tetraphenylboron association complex with PVC membrane on a glass electrode is reported. The electrode showed a high selectivity and fast response. It has been used for the determination of levofloxacin in levofloxacin injection and tablet. The procedures of this method are simple and the results are satisfactory.
