1-Methylcyclopropene (1-MCP) is a new ethylene action inhibitor. It was found that 1-MCP may inhibit the ethylene by strongly blocking ethylene binding and ethylene action to protect the fruit in postharvest.In this research, the effects of 1-MCP of different concentrations in tomatoes were evaluated. The tomatoes were treated with 1-MCP of 0μl.L-1,0.25μl.L-1, 0.5μl.L-1,0.9μl.L-1. The texture indexes such as hardness, negative peak load and the physical-chemical indexes such as ethylene, respiration, total soluble solids(TTS), and the enzyme indexes such as the peroxidase (POD) , polyphenol oxidase (PPO) , pectinesterase(PE) as well as the inner structure were studied during the storage. The results showed that the decreasing of the hardness was inhibited, the 1st fracture drop off was maintained, and those such as the production of the ethylene , the degrading of the chlorophyll, the decreasing of the titratable acid were inhibited, as well as the changing of the enzyme activities. And 1-MCP can keep a better condition of the inner structure of the tomato. The conclution of the research is the best concentration of 1-MCP is between 0.5μl.L-1 and 0.9μl.L-1.The effects of 1-MCP of different concentrations in strawberry were studied in this paper too.The concentrations of 1-MCP is 0μl.L-1, 0.25μl.L-1,0.5μl.L-1 and 0.9μl.L-1. The texture indexes such as hardness, mean load and the physical-chemical indexes such as ethylene,respiration, TTS, and the enzyme indexes such as the PPO were studied during the storage. The results indicated that the treatment of 1-MCP could maintain the hardness of strawberry fruit, decrease the TTS's increasing and the decreasing of the chlorophyll. However, the treatment of the 1-MCP accelerated the increasing of the respiration and malondialdehyde(MDA). But it was also found that the treatment of 1-MCP is not obvious in PPO.In this study, the inner structure of the tomato were studied with the scanning electron-microscope (SEM). It was the first time to research the microstructure in the cell level. With the results, the experimental system has been set to research the textural changing of tomatoes and strawberries during the storage. At the other hand, the activities of the enzyme in tomatoes and strawberries were evaluated in order to provide new evidence for the effect of 1-MCP and the mechanism of 1-MCP.
