This thesis mainly studied vegetable paper based on modified chinese cabbage fibre, which was parts of the project"Investigation of Intelligent Structure of Protein-Based Edible Biopolymers (number: 20060717)"that subsidized by Development plan Fund of Jilin Science and Technology office.The Chinese cabbage is the traditional vegetable in China. Vegetable paper is the ideal packaging material, although the Chinese cabbage fibre has the shortcoming of low content and high water retention value.The development of vegetable paper is one of the research foci of food package industry, and has widely come to attention in some countries. Vegetable paper can be used to substitute the plastic as the internal packaging of food or drug that can be eaten without tearing off. It is convenient, healthy, and free of rejectamenta pollution. The vegetable paper studied in the thesis are based on modified chinese cabbage fibre, in order to resolve the problems of vegetable paper modling and gain high quality vegetable paper based on modified chinese cabbage fibre.The main contents and conclusions are as follows:1)By the the different craft parameters and orthogonal L9(34) experiments, the preferable experimental conditions of extracting chinese cabbage fibre was ascertained, which were 8.2% sodium hydroxide, 58min, 100℃;2)Under such conditon, the average length of chinese cabbage fibre is 1.35mm, and the length/ width is 69.5, and the accessibility is 33.01, and water retention value is 360.7%.3)In order to improve the flexibility and transparency of vegetable paper based on modified chinese cabbage fibre, experimental study on the capability of paper molding between chinese cabbage fibre and chinese cabbage paste was necessary. Results showed that vegetable paper based on chinese cabbage fibre shrinked togather, thickness was odds, tensile strength was 2.13MPa, andelongation was 7.62%.4)Vegetable paper based on chinese cabbage paste shrinked togather, thickness was odds, diaphaneity increased, tensile strength was 0.36MPa, and elongation was 1.02%.5)By the the different craft parameters and orthogonal L16(45) experiments, The conditions of citric acid forming crosslik between chinese cabbage fibre were as follows: citric acid concentration was 9.8%, citric acid soakage temperature was 56℃, soakage time was 226min, cure temperature was 160℃, and cure time was 280s.6)Under modified reaction conditon, the average length of chinese cabbage fibre is 1.43mm,and the length/ width is 60.3, and the accessibility is 7.12, and water retention value is 278.6%.7)In the citric acid forming crosslik between chinese cabbage fibre, there was a direct ratio relation between the accessibility and water retention value, and these data reveal the quantity of active hydroxy among chinese cabbage fibre. Water retention value became decreasing as the development of esterification.8)Vegetable paper based on modified chinese cabbage fibre was investigated by microscope. Compared with the untreated papers, the papers based on forming solution which were treated by citric acid forming crosslik showed better structure, more flat, smooth, and compact. The surface homogeneity was improved.The average thickness was 0.313mm, diaphaneity increased, tensile strength was 3.07MPa, and elongation was 9.59%.The innovation points of the thesis:1)Research the extract condition of fibre with alkali hydrolyze from chinese cabbage, and analyse the average length, the length/width of fibre,the accessibility, and water retention value.2)Research the condition of citric acid forming crosslik between chinese cabbage fibre. and anal yse the average length, the length/width of fibre,theaccessibility, and water retention value.3)Analyze the tensile strenghth and the elongation of vegetable paper based on modified chinese cabbage fibre,and observe the microcosmic structure of vegetable paper...
