Oils play an important role in people's livings and economic development. It, carbohydrates and protein compounds are there essential nutrition ingredients for human body. The functional ingredients that exist in oils mainly include the unsaturated fatty acids, the phytosterin, the fat soluble Vitamin and so on. The functional fatty acids are refered in particular to the fatty acids which originate from human meals fat and are necessary for nutrition and health of human body. They can prevent and control positively some corresponding deficient ailments and immanent diseases which are already discovered now, specially some civilization diseases in the advanced society, like hypertention, heart disease, cancers, diabetes and so on. The fatty acids include alpha-linolenic acid, linoleic acid, EPA, DHA and so on. At present, the products that consist of founctional fatty acids already display more and more important value in the treatment of many kinds of diseases and in the health care, and have became the hot spot in the research and development of medicine and healthy products.One important target of separation and purification of functional oils is to enhance the content of the functional fatty acids. Therefore, it is necessary to establish a method for accurate determination of fatty acids content. This article has established a gas chromatographic analysis method of fatty acids in functional oils. The Autosystem XL semiautomatic gas chromatography (American Perkinelmer Corporation) and the PE-225 capillary vessel column (30m×0.25mm×0.25μm) were used to determine the composition of seal oil fatty acids in the experiment. The effects of methyl ester method and separation temperature on the determination results have been investigated. The results indicated, the speedy methyl ester method is one kind of fast, simple and effective method for GC analysis of seal oil fatty acids. In the separation process of the esterification derivatives of seal oil fatty acids, the separation effect was better when the two steps temperature program was used. In fatty acids qualitative and quantitative aspect, this article choosed chromatograph - mass spectrum (GC-MS) qualitative method and area normalization method, thus the expensive standards were omitted, moreover the analysis results are also reliable. This article has also carried on contents determination of fatty acids in two kinds of vegetable oils—olive oil and camellia oil which are abundant in oleic acid.The determination results indicate that, the content of oleic acid in the camellia oil is higher than the content of oleic acid in the olive oil.
