Now, beef quality evaluation methods become a perfect system in the USA, Japan and Australia etc. But there is not an official beef quality evaluation in our country. It set down primarily though testing and studying in great force by Nanjing Agriculture University, Chinese Agriculture Science Institute farming graduate school and Chinese Agriculture University during'the Ninth Five Year Plan'. And the beef quality evaluation validated, amended and perfected by Nanjing Agriculture University during putting in practice process of the first agriculture spanning plan item of our country. The beef quality evaluation have beef carcasses quality evaluation and output grading evaluation. But those two standards could not use in measure on line in Haoyue company. And it does not according to the production of Haoyue Company. How to evaluate beef quality of Haoyue Company is a difficult problem. The main contents are as follows:1. Introducing beef quality evaluation standard of Haoyue Company in being. From cattle come into the fence, the beef quality had been controlled by Haoyue Company. And it according to national standard to quarantine the beef before slaughters the beef and after slaughters the beef. Haoyue Company evaluates the beef quality by beef color, marbling, fat color, beef thickness, backside thickness, pH, tenderness and flavor etc. And it had standard drawing and standard method.2. Adopting to relativity analysis method, finding out the contact from cattle parameter by using unitary linearity regression analysis. It converse the beef slaughter rate formula and beef weight rate formula, then finding out the single factor estimate equation. By validate testing data, it chooses the carcass gross weight as single factor to estimate the slaughter. The max error is 8.82%, the average relatively of integer error is 2.71%, the max relatively error of predict beef weight rate is 4.23%, the average relatively is 1.61%. The nicety rate is very high, and the method is facility and shortcut, and the result is utility, it arrive to the anticipative aim. 3. Though the testing data getting from Haoyue Company, it discuss the beef carcass evaluating method which adapt to Haoyue Company. The results show us that it had large error, which evaluate by beef weight rate and slaughter rate which replace by beef cutability. At last, it set up an evaluation beef carcass output method, which use slaughter rate evaluation as benchmark and use beef weight rate as restrict condition, form8.4.It chooses some parameter to evaluate the beef weight, such as the beef carcass gross weight, and carcass weight before maturation and carcass weight after maturation, bone weight, carcass length, carcass breadth, eye muscle area and backside breadth. It has strong relativity among the every index except the backside breadth. The correlation coefficient of most originality information exceeds 0.3. So it can use in main ingredient analysis. It can use main ingredient analysis to reduce dimension of data. The adding up contribution rate of first three main ingredients arrives to 94.22%. So it can show the most information by the first three main ingredients.5. Evaluating beef weight by multianalysis regression and artificial neural network, then finding out the best predict equation. It can be seen that despite the multianalysis regression can predict the beef weight rate accurately. But the notability probability exceeds 0.05, so the equation could not use in work. BP artificial neural network can predict the beef weight. The nicety rate arrives to 90%. So we choose BP artificial neural network to predict the beef weight.6. Studying marbling assesses reference drawing of Agriculture Bureau and reference drawing of Haoyue Company though image process technique. Separating marbling area through thresould value method and getting two-value image. Then it can get marbling area numerical value character exactly. According to data character, it set up marbling grading assess equation and grading assess table. At last it assesses the marbling grading numerical value method. It set up and validates the math model. The result show that the grade assessing equation of Agriculture Bureau nicety rate arrived to 85% and the grade assessing equation of Haoyue Company nicety rate arrived to94.4%. It showes that the beef marbling grade assessing drawing of Haoyue Company is adapt to our company than another.
