Monascus had been used to prepare red mold rice as a natrural food pigments, and also as a food preservative for a thousand years. The physiological active substance produced by Monascus had been researched widely. At present, however, most of Monascus, used in industry widely, was proved to produce citrinin, which was a mycotoxin, accompanying with pigments and physiologically active substance. Kidney was the target organ of citrinin, resulting in not only teratogencity and carcinogenicity but also mutagenicity. It was adversed to the farther use of Monascus products.Monascus was separated and purificated from industrial prepared red mold rice, then cultivated in liqour-fermentation. The dynamics, metabolizability and representation of Monascus in different environment were investigate. The citrinin production in Monascus was detected by TLC-IPP and HPLC, the detection limit of citrinin with HPLC was 0.2mg/LMixedcultivated Monascus with other fungus, found out that it was benefit to accumulation of monascus pigment when Monascus mixedcultivated with Asp. niger and Asp. flavus, the content of Monascus pigment in mixedculture would rich to 164% and 135%, respectly.
