| Dietary fiber (DF) is a kind of natural high-molecular organic compound. The definition of AACC (American association of cereal chemist) in 2001 is that dietary fiber is the edible parts of plants or analogous carbohydrates that were resistant to digestion and absorption in the human small intestine with complete or partial fermentation in the large intestine. Dietary fiber includes polysaccharides, oligosaccharides, lignin, and associated plant substances. Dietary fibers promote beneficial physiological effects including laxation, and/or blood cholesterol attenuation, and/or blood glucose attenuation. Dietary fiber has various physiological functions, and contributes a lot to disease prevention and keep fit. Dietary fiber is a good material for nutritious food. So the dietary fiber is considered as functional food by nutritionist.Soybean dreg residue (SBR) and oat bran (OB) were chosen as the experiments materials. The optimum preparation method of SBR and OB dietary fiber is determined in this essay. The modification effect of instantaneous high pressure (IHP) on DF is studied systematically for the first time; the operating process of Microfluidizer to produce IHP is studied preliminary. The physical properties of DF samples fore-and-aft IHP treatment were determined; the IHP treatment has modification effect on the properties of DF, which is drawn by comparing the results.The purpose of this research is to evaluate the extent of IHP effect on fiber samples and to relate those determined properties back to the framework of interest. It also aims to draw a picture of future appliance of soybean dietary fiber as a new food additive and IHP as a new food processing method. The main content of this research are mentioned as the following:1. The preparation method of SBR and OB DF. DF samples were obtained by enzyme method and chemical method; in order to narrow the trial stretch, ratio of material to solvent, extracting temperature and processing time by alkali, were examined as single factor. Then the orthogonal experiment was carried out based on this, and the optimum preparation conditions were obtained.
