The Tenebrio molitor L. contains high protein, Hydrolysis Tenebrio molitor L.protein not only includes all kinds of amino acids , but also have its unique flavor and deliciousness, using hydrolysis Tenebrio molitor L. protein to make compound amino acid drink with rich nutrion and health function has bright future.This research takes the Tenebrio molitor L as raw material. It analyzes the results of dryed Tenebrio molitor L larvas under different temperatures and attempts to find the optimal parameter of enzymolysis and the best conditions under which trypsin hydrolyzes Tenebrio molitor L.protein. Based on the problem of the weak hydrolyzing rate of trypsin, this paper discusses how to improve the hydrolyzation of trypsin from several aspects, such as degreasing, leaching,soaking and hydro-lysing with double enzymes, adding metallic ion and so on. The decoloring experiment to the hydrolyzing liquid with active carbon and the deodoring experiment withβ-cricoid dextrin as the deordoring material are carried out. Honey, sugar and citric acid are used for seasoning. The prescription and producing procedures of health care oral liquid of tenebrio molitor L.are made. This thesis sets down the quality standard of the products and the risking assessment for the investment.The following are the main results of these experiments.1. In the experiment of drying Tenebrio molitor L larvas under different temperatures, it shows that the temperature under which the color of the larvas best and the flavor better are100℃and 120℃. It is under 100℃and for 200 minutes that the protein and amino acids of roasted larvas are less damaged.2. As the best hydrolyzing enzymes of Tenebrio molitor L.protein , trypsin is extracted in the following optimum extracting technological conditions:the content of enzyme is 0.5%, the solid to liquid ratio is 1:3, pH value is 7 and takes 7 hours in 60℃.3.
