Acid protease is a enzyme which decomposes protein in the acid conditions, its optimal pH is 2.5-5.0. Acid protease has good pH tolerance, so it has been widely applied in food, medical industry and feed industry etc.According to literatures, most of the acid proteases are fungal acid proteases, and the optimal pH is about 3.0. The enzyme activity will decrease when the pH increases. Because this type of acid protease is thermolabile, when temperature was above 50℃, the enzyme activity will devitalize quickly, the range of application of acid protease is restricted to a great extent.So the aim of the study is to screen a strain producing thermophilic partial acid protease.This thesis is consisted of 5 parts:(1) Isolating and screening the strain producing partial acid protease.(2) Studying on the optimal fermentation condition of P-1007.(3) Studying on enzymatic properties of partial acid protease produced by P-1007.(4) The primary studying on the properties of P-1007.(5) The application of partial acid protease on clarification of beer.The detailed results and conclusions were as follows:...
