This paper studied the techniques of using corn microporous starch as wall material to make microcapsule with high ratio of activity lactobacillus and intestinal releasing character. Meanwhile, the effect of activity lactobacillus microcapsule on intestine systems has been studied. The result shows that microporous starch can improve the activity of lactobacillus and intestinal releasing effectively. The microcapsule can obviously increase the amount of activity lactobacillus, improve the intestinal environment and reduce the fat of blood. The results of this thesis are as follows:1, A series of parameters of the raw corn starch and microporous starch were determined through experiments. The rate of water absorption and oil absorption in microporous starch significantly increased. The rate of water absorption in microporous starch were 120.72%, has increased 103.3% than 59.38% of corn starch; while the rate of oil absorption in microporous starch were 1.32L/g, has increased 55.29% than 0.85mL/g of corn starch.2, The optimal embedding conditions for lactobacillus using microporous and sodium alginate have been determined through experiments. The conditions are, using microporous starch 5g, 50mL solution which initial concentration around 1.0E+08cfu/mL, pH 6.5, absorbing temperature at 20℃, shaking for 40min, using the concentration of sodium alginate and CaCl2 at 2%, using freeze Dried. With these optimal conditions, the amount of active lactobacillus in microcapsule can up to 8.7E+08cfu/g, and the microencapsulate efficiency of products is 98.5%.3, External simulation intestines and stomach systems test have confirmed that the microcapsule can be dissolved in intestines system. The microcapsule was indiscerptible in stomach system Ⅰ and Ⅱ, and the amount of active lactobacillus in microcapsule still reaches 9.8E+07cfu/g,9.2E+07cfu/g. At three kinds of simulation intestines systems, the amount of active lactobacillus reaches 6.7E+05cfu/mL2.2E+06cfu/mL,8.2E+06cfu/mL respectively.4, In the research on release and physiological functions of lactobacillus microcapsule, 24 aged Wistar rats were randomly divided into 4 groups and conesponding fed diets with 1% raw cornstarch (control group, CS), microporous starch(MCS), microporous starch lactobacillus microcapsule...
