In this thesis, the pollution in food and its toxicity to human being were discussed. It is shown that the pollution status in food has been more and more serious. In order to protect the food from being polluted, it is necessary and significant to monitor the contamination in food samples. In our country, there is a lack of standard analytical method for the determination of contamination in food, so we need to launch a study on the monitoring methods and instruments for that, especially to launch the study of fast determination. In this thesis, to content the requirement for the fast determination of formaldehyde and hydrogen peroxide in food, effective methods which can accomplish the determination within 30 minutes have been developed. 1. Fast determination of formaldehyde in food There is a standard method published by agricultural department, however, this method need long time to accomplish the detection. In this thesis, three novel means were used to extract the formaldehyde from food samples, the time of the extraction was studied and optimized. The results show that extracting formaldehyde in boiling water bath enable the detection to be completed in 30 minutes. 2. Fast determination of hydrogen peroxide in food Two novel methods for determination of hydrogen peroxide in food were developed. The hydrogen peroxide in food samples can be extracted in acid medium and water bath. Various experimental parameters such as the temperature of the water bath and the time of the extraction were studied and optimized. The analysis of each sample can be completed in 30 minutes with both methods.
