Black fungus is the traditionally edible treasure that people fond.It is not onlydelicious,nutritious, but also officinal. It is known that that it is benefit for bloodcirculation, relieving pain , depurate stomach and intestines etc. Blackfungus,which belongs to colloid, has strong sorption. It can adsorb the rudimentalimpurity and the grit in the digestive system of clay.Because of this idiosyncrasy,black fungus is used as the health food who is engaged in pollutive profession. Inrecently years, with the improvement of people's living standard and the renewal ofconcept, treasure from mountain and black food are known and liked by people,because of its characteristic of pollution-free , nutritious , health care withremarkable result ,black fungus in Changbai Mountain receives people's favor verymuch.However, in our province and even our country the process technology ofblack fungus lag behinds relatively, and the processing of the black fungus is less invariety on the market, so it can't meet the edible demands for the black fungus food.It is very regrettable that the leftover of some black fungus brick processing factoryis throwed away in vain.That the black fungus and the leftover of black fungusfrom the processing factory is the main raw materials that this text uses.First,applythe technology of superfine grinding to pulverizing black fungus into tinygranule.Second,cellulase degrade the tiny granule in the condition of ultrasonic.Our purpose is making the cell wall breaking drastically ,superfine grinding and thenutritious substance may set free from the cell of black fungus,and sequentiallyimprove the percent of assimilation. Ulteriorly ,we will research and developblack fungus bread and beverage to do beneficial exploration for the deeperlyprocessing of the black fungus products. The following is main research contents ofthis text and relevant conclusions:1.Having collected the nutritional labeling of black fungus,the materials madeup the structure and the cellulase enzymes hydrolysised principle of the cellularwall, the information theoretically illuminated that it is necessity and feasibility tomake the cell of black fungus drastically superfine grinding and the nutritioussubstance set free from the cell of black fungus,and sequentially improve thepercent of assimilation.2.Applying sedimentation to contrast samples which have been preheated andwithout preheats,the result of the test could be concluded that the crushedgranularity of preheat treated black fungus must be smaller than the one whichhasn't been preheated,and has the better character of homogeneous.3. According to the crushing principle of fibre, the orthogonal experimentcould be designed.Having analyzing the result of the test,the conclusion could beeduced that the concentration of granule is the most important factor, themarinated temperature takes second place,and the marinated time exerts leastinfluence.The best technics is concentration of granule—1:200,marinatedtemperature—60℃,marinated time—120min.4. Having summarized the testing factor of reaction,we designed some test asthe following.First,the test had been designed to research the function connectionbetween the concentration of cellulase enzymes and polysaccharid deliquescentpercent under the ultrasonic condition.Second,the text would be framed to researchthe effect of temperature and pH of cellulase enzymes hydrolysised reaction topolysaccharid deliquescent percent under the ultrasonic condition.5. Comparing with the influence of several extracting method to blackfungus,and drawing the conclusion through the test: the method that this textadopted is very ideal,and it has many merits,such as less time of reaction,morepolysaccharide deliquescent percent.6. Having described the hereditary algorithm that this text used to ask andsolve the theory course of the optimum value of models.Firstly,this textilluminated the parameter code of model, the creation of primal population ,thedesign of fitness function,the algorithmic realization of choose,cross and variation.Secondly,treatment method had been described in restrained condition in thearticle.Thirdly , through the demonstration of the convergence property ofhereditary algorithm used in this text , we can draw the conclusion that it must besolve optimumly value in the overall situation ,and it can be used in asking thequestion of solving of optimum value in this text model becomingly.Finally,theflow chart had been described the hereditary algorithm to ask the operation course .7. According to the characteristic of the hereditary algorithm, basic theories,this text dealed with the mathematical model of cellulase enzymes hydrolysisedreaction.The optimumly value is temperature—41.88℃and pH—4.61 ,polysaccharid deliquescent percent—16.9568%.8.According to ultrasonic production and function principle, the compositionof the cellulase enzymes and principle of hydrolysising,this text induced thecellulase enzymes hydrolysised reaction can be accelerated under ultrasonic wave.9.On the basis of analysing basic model principle reacting , this text had set upthe dynamics model of the cellulase enzymes hydrolysised reaction.
