Abstract In this paper, the distilling method of clove essential oil and making clove essential oil microcapsule were studied. The factors effected distilling rate of clove was analyzed. The compositions of the distilling were analyzed by GC-MS. The study focused on making clove essential oil microcapsule by air stream tiny hole installation and spry-drying. It put up series of research on the factors which effected the process and microencapsulating efficiency, optimized the technologic parameters, searched the inside and outside structure of the product with SEM, tests the time that the microcapsule product can remain in the simulative gastric juice. The results showed that:The best technologic parameter by water vapour method distilling the clove were: the proportion of material to water was 1:8,the best degree of the clove was 0.3mm~0.5mm.The best technologic parameter were material to organic solvent=1 :20,the distilling time was 6h, the proper distilling temperature was 55℃ during distilling clove oleoresin by organic solvent.The compositions of the clove distilling were analyzed by GC-MS. The results showed that: the dominating compositions were Eugenol,Phenol,2-methoxy-4-(2-propenyl)-,acetate, Caryophyllene. The compositions by water vapour and super critical CO2 were similar. But the compositions by organic solvent were not similar to the others.To improve the preservative capability of the clove essential oil, the clove essential oil microcapsule made by air stream tiny hole installation and spry-drying were studied. The results showed that: the proper technological condition in experiments that concentration of sodium Alginate, emulsifier, CaCl2 and the proportion of core-material and wall-material were 2.5%,0.2%Tween-80+0.1%monoglycerude,2.0%,1:1 respectively by tiny hole installation. Microcapsule in good condition by spray-drying technological parameters as follows can be obtained: the Gum Acacia and Maltodextrin was in proportion of 1:1 as the wall materials, the proportion of clove essential oil to wall materials was 1:12, the concentration of the emulsion was 20%, the using quantity of emulsifier was 0.3% emulsion, temperature of entering wind and out wind were 220℃ and 180℃, homogenizing time was 15 minute.This product has the flavor of clove. By observation the photograph of the scan electron microscopy (SEM) of the products, the clove essential oil was embed well and was prevented volatilization effectively and prolonged the shelf life.The microcapsule can stay in the similar gastric juice for 11h. It adapts to be absorbed in intestines, and did not stimulate the stomach. The release of the products by spray-drying and tiny hole installation were various, so the products were used in different condition.
