Dong jujube is a special kind of fruit of our country, which belongs to the excellent fresh edible species. The fruit of dong jujube has the content of water 69.8% and it's nutrition value is high, eg. Soluble solid substance 34%~36%, total flavonoid 0.26% , nicotinic acid 0.87 mg· 100g-1, the vitamin B1 10.1 mg·kg-1, the vitamin B2 2.2mg · kg-1, vitamin C 300-500 mg · 100g-1. In addition, it still contains much more vitamin A,E, P and various mineral elements indispensable for human body such as K, Fe, P, Ca etc. Dong jujube contains lots of winter and it is especially sensible to the carbon dioxide in the storage environment, furthermore, the characteristics of thin frail skin can easily cause to mechanical damage during pick-up or transportation and lead to breeding of the mold. Postharvest, dong jujube is easy to lose the water, wrinkle ,soften and rot with the Vc decreasing rapidly without any treatment, Dong jujube will lose its fresh edible value after 3~5 days storage at the room temperature, as freshly edible fruit , the processed product not only has not its original features and flavors, but also lose the Vc, cAMP, cGMP etc. which lower nutrition value and economic value of Dong jujube severely. Currently, studies on storage and fresh-keeping technology of Dong jujube have involved, but the research theories on postharvest physiology have litter break through, therefore, performing the study on storage theory of Dong jujube and providing a theoretical basis for hypoboric storage technology, can keep the nutrition utmostly, reduce the rot of fruit and prolong the shelf-life .All these studies have the remarkable practical importance for constructing Dong jujube industry, raising people's life standard exporting to generate welcome income and enrich the physiological theory of fruit and vegetable in the meantime.Fresh fruit is divided into climacteric fruit and non-climacteric fruit according to the variety of respiratory intensity during storage. The theories that Eth is the mature hormone for climacteric fruit has already been accepted by the people, but the mature mechanism for non-climacteric fruit is still not very clear. In recent years, the phenomenon ABA that can induce the maturity of non-climacteric fruit causes the people extensive concern, Scientists have already affirmed that ABA is a importanthormone inducing the maturity of non-climacteric fruit. Most researcheres think that Dong jujube belongs to non-climacteric fruit. During the mature process, the regulation of inside hormone Eth is minor, but ABA plays a leading role probably. GA3 is a growth hormone, coexisting with ABA in the plant, but the properties of them are absolutely different, ABA can promote mature and accelerate decrepitude, but the function of GA3 is exactly opposite, what's more, ABA and GA3 also express mutual antagonistic effect on the quantity, The interesting mechanism as following: ABA and GA3 both come from MVA, form FPP by the same biological synthetic path and then go by different ways according to the respective biological synthetic path.To explore the mature mechanism of Dong jujube, this paper studied ABA formative mechanism of Dong jujube during storage, sought the effective measures to inhibit the formative of ABA, in order to provide theoretical reference to fresh-keeping technology of Dong jujube and others non-climacteric fruit.The main results of the experiment are as follows:1) The Dong jujube belongs to the non-climacteric fruit, ABA is the important hormone inducing the decrepitude during storage.2) Temperature plays an important role in the storage of Dong jujube. The low temperature can lead to the content of FPP and GA3 go up and the content of ABA decrease.3) Ozone can sterilize the harmful bacteria on Dong jujube's surface. The effect is optimal when Dong jujube is treated with 300 mg ·m-3 ozone and store at -1 ±0.5℃. But ozone have litter influence on FPP, GA3 and ABA of Dong jujube.4) Dealing the Dong jujube with fluridon and storing at -1±0.5℃ can add the content of FPP, inhibit the formation of ABA, promote the formation of GA3 and postpone the ripeness and senescence of Dong jujube. The fruit treated with the concertration of 0.5 mg·mL-1 fluridon can be kept much longer than that of 0.25 mg ·mL-1 fluridon.5) Dealing the Dong jujube with hypobaric and storing at the -1 ±0.5℃ can add the content of FPP, inhibit the formation of ABA, promote the formation of GA3 and have the function of deferring the maturity of Dong jujube. The fruit treated with 20.3 KPa can be kept much longer than 60.7 KPa.6) Dealing the Dong jujube with the concertration of 0.5 mg·mL-1 fluridon and stored at -1 ±0.5℃ and 20.3 KPa, it can be stored for 140 days, the good fruit rate is...
