Three kinds of solvent were applied to extract L-carnitine from meat, then the extractions were determined by enzymatic assay and HPLC. To compare the relation between L-carnitine content and the sorts of meat, the mutton, beef, pork, chicken were used. The results showed : 1 , The L-carnitine of determination, others had little effect on HPLC and it is more simple, faster and more immediate than enzymatic assay 2, the mutton contains the highest contents of L-carnitine in four kinds meat, the optimum extraction rate of L-carnitine can be obtained by HCLO4, but based on the application, the better effect also can be gained by hydrochloric acid solvent.Kunming rat was fed on L-carnitine solution by oral administration 10mg/g.d, 30mg/g.d(II, IV fed on 10mg/g.d, 30mg/g.d from chemical synthesis, III fed on 10mg/g.d from extractions of mutton). Using the comparison between groups: 1, To contrast the body weight and swimming time of rats, the weight of rats dropped (P<0. 01), the swimming time risen(P<0.01); 2, Applied reagent kit to measure the serum index: CHO, TG, Urea, Lactic acid, and determined water of leg muscle by freezing dryness, L-carnitine by HPLP. Results showed: L-carnitine on the growth of rats without adverse effect, decreasing the content of CHO and TG distinctly(P<0.01); Urea and Lactic acid greatly (P<0.01). The other results also made out : the 30mg/d.g dose is not better than 10mg/d.g dose; extractions from meat had better function on rats than chemical synthesis.Three other rat groups set up for cross experiments, the oral administration(10mg/g.d).One group for comparison, the other two groups feed on L-carnitine( II from mutton extraction, III from chemical synthesis). Then exchange the means of feeding after a while. Operated as above, the results showed: L-carnitine doesn't have the durable effect. At last, fatty acid of leg muscle extracted and basified in the methanol. Analysed dribs and drabs of fatty acid by GC/MS, which proved L-carnitine help the transportation of long-chain fatty acid.
