Thirty-four color rice varieties were employed to study the content of seventeen kinds of ammo-acids, five kinds of fatty acids and oryzanolum in their rice bran. The differences of nutrient quality among three kinds of color rice varieties and the variant tendency had been compared in this thesis. The objective was to choose the varieties which content high essential amino acid, unsaturated fatty acid, oryzanolum, and nutrient component steadily grow in different season.1 .Black rice bran's Lysine content is higher than red rice bran's on the pole-significant level, and white rice bran's is higher than red rice bran's on the significant level. Three color rice bran's Total Amino Acids(TAA) content have not significant difference. The Lysine content and TAA content are quite high in some white rice bran, even higher than that in certain black rice.As far as same weight brown rice is concerned, black rice's lipid content and Linoleic acid content in bran is higher than red and white rice's on the pole-significant level, but white rice's and red rice's have not significant difference and three color rice bran's unsaturated fatty acid proportion in the fatty acid have not significant difference.Black rice bran's oryzanolum content is higher than red rice bran's and white rice bran's on the pole-significant level, and white rice bran's and red rice bran's have not significant difference.2. The variety with highest Lys and TAA content in rice bran is the 'aixuenuo', and the content is steadily growing in early and late season in Fuzhou; The variety 'chongyannuo' has the highest unsaturated fatty acid proportion in rice bran, and which are steady cultivated in the early and the late season in Fuzhou; The oryzanolum content in the variety 'JHZZ'(white rice) and black rice varieties are higher than the others.3. When the same variety cultivated in the same locality, the content of TAA, EAA(except Thr) and lipid grow in the late season(from July to November) are higher than in the early season(from March to July), and the content of the oryzanolum and Linoleic acid proportion are contrary.
