| WuZhiShan Pig (WZSP) is a kind of miniature pig which once lived in the isolated tropic places in HaiNan island and was born inbreeding in long term. In I 980s, scientists researched animal kinds all over the country and found that WZSP had almost died out. So it was pointed to protected kind and became one of the rare pig kinds in the world. The experts in Institute of Animal Science of CAAS (Chinese Academy of Agriculture Science) began to preserve and ex-situatedly breed it in Beijing. Preservation includes investigation, evaluation, protection and usage, in which usage is assurance of protection and evaluation is precondition of usage. Meat of WZSP being produced in food must be the result of quantity of breeding, which is our expectation. Compared with Inner-Mongolia XingPig and Beijing BlackPig, the paper studies carcass properties, sensory characters, edible qualities and processed performances on WZSP and its meat. The following conclusions can be reached in the study: Firstly, on carcass properties, WZSP is characteristic of thin skin, low fatness, thick muscle in back and high meat production. Its meat percentage is more than 60%. But its ham is not full as comparisons. Secondly, in healthy bodies, the meat of WZSP has normal meat color, fine spring and few marbling, which display the sensory characters of WZSP. More over, the edible qualities of WZSP meat are typical of rich amino acid kinds and quantity, especially favor amino acid quantity, and low fatness. After cooking, the meat is soft and tender, in the meantime tastes beautiful and gives excellent favor. But its constitutes of fatty acid is not reasonable, which should be improved in future.
