| In this paper, technology and mechanism of the controlled atmosphere drying processing were studied for the purpose of improving edible fungus?quality by using double candensators and double evaporators heat pump system. In addition, the choice of optimum drying technological parameters was also studied. The research mentioned above provided scientific basis for research of the controlled atmosphere drying equipment and large-scale production of edible fungus.1 The effect of initial temperature on polyphenoloxidase and peroxidase was studied. The result showed that 40C and above could inactivate PPO's activity, 40℃was the optimum temperature to inactivate POD's activity.2.The effect of fore-temperature, after-temperature, velocity of thermal airflow and conversion moisture on water-removing rate, energy consumption and organic quality was studied by using quadratic-regression-cross design method. We established mathematical models, and analyzed models with muti-objective optimization theory, and obtained the optimum parameters.3.N2 and CO2 as substitues for air were used as drying medium to dry mushroom, the relation of different atmosphere content and mushroom's browing degree was established.4.The mathematical model of equilibrum moisture content isothermal line was obtained, it was Modified-Henderson model. |
