y -decalactone(GDL) is a lactone used to formulate cream, peach, orange, and coconut flavors. Its feasibility, fermentation, extraction and fermentation dynamics was investigated by using Yarrowia lipolytica AS2. 1405 as strain and castor oil as substrate. The optimized fermentation medium consisted of castor oil 5% (vol/vol), peptone 0.5%, yeast extract 0.25%, surfactant 0.4% (vol/vol), MgSO4 7H2O 0.24%, Na2HPO4 0.12% and KH2PO4 0.025%. The fermentation parameters included 50m1 mediuml500ml flask, temperature 25 ~C, seed age 72 hours, inoculation 8% (vol/vol) with a yeast suspension (2.0 X I O7cells per ml) and p11 6.%7.0. The output of Y -decalactone reached 0.5 gIL. In addition, the hexane was identified as the extractant, the conditions of extraction were pH 4.0, temperature 20 concentration 1:1. The dynamics of fermentation was established, which includes the biomass curve, the Y -decalactone production curve, the substrate consumption curve. The experimental data well fitted these models as the significance coefficients of the models were above 0.99.
