| This paper took caprine tail oil of Altay as raw material. Caprine oil power was produced by refining and de-cholesteroling the caprine tail of Altay. Then the raw caprine oil was adopted to doing antioxygen experiment. The main results as follows:Firstly, defined the technological conditions of caprine oil refining by orthogonal experiment. In acidom degumming, the acid addition was 3%, the degumming temperature was 90℃, the degumming time was 40min and the stirring speed was 50r/min. Then the degumming rate was 83.52%. In alkali refining disacidify, the alkali super-addition was 0.4%,the addition temperature of alkali was 52℃, the midway heating temperature was 85℃, the disacidify time was 39min, the initial stiring speed was 210r/min and the midway stiring speed was 70r/min. Then the disacidify rate was 92.74%. In attapulgite decolor, the attapulgite addition was 3.5% of the oil weight, the decolor temperature was 85℃, the discolor time was 45min and the stiring speed was 260r/min. Then the decolor rate was 91.58%. The refined oil met a criterion of edible oil.The optimum conditions to de-cholesterol caprine oil were defined by oxidase and analysised by response surface were as follow. The enzymatic addition was 2.76% of caprine oil weight, the action time of enzyme was 6.43h and the de-cholesterol rate was 57.95% when the action temperature of enzyme was 44℃.Caprine oil powder could be produced form caprine oil by cryochem. The milling condition which analysised by response surface was as follow: The ratio of embedding medium and caprine oil was 1:1.11, the water content of emulsion was 81.2% and the homogen pressure was 25.7MPa. Then the embedding ratio under the optimum conditions was 79.66%.Through studying on the antioxygen ability of caprine oil and analyzing the additional effect of different antioxidant. The conclusion was as follow. The antioxidation of three antioxidant to caprine oil was TBHQ>BHT>BHA. The antioxidant effect of composite was obviously better than single one. Mix TBHQ and BHT will have the best antiocidant effect and the ratio of TBHQ to BHT was 2 to 1. Citric acid has synergistic effect with other antioxidant. The caprine oil with composite antioxidant additivel has better antioxygen effect and longer storage time than crude oil. It could efficiently inhibit spoilage was caused by oxidation during storage and marketing, and extend the storage time from 10d to 40d in 60℃and 5 month to 17 month in 20℃.
