Edible oil is not only the source that people incept energy and nutrition from,but also the important raw material that process foods. Fried foods are liked by consumers because of its unique flavor.But during fry foods, a series of physical and chemical changes occur in the deep frying oil,those changes will produce some harmful substance to the health of consumers.At present,the traditional method of detecting frying oil are mostly chemical methods,these methods must be operate in the laboratory by professionals,they are time-consuming and laborious, the use of chemicals harm the health of laboratory staff,and chemical waste agent pollute the environment.Polar components of frying oil is a national standards in our country, it is often used as a indicator to determine the quality of frying oil. The subject studies an on-site, rapid detection technique that decide the quality of frying oil based on the influence between polar component and dielectric property in frying oil. This technique use oil capacitance sensor as the measurement front-end,and use embedded Cortex-m0 core micro-controller unit to complete edible oil-quality signal's acquisition, processing and display.The mainly accomplished works of this subject as follow:1. Develop oil capacitance sensor.The subject show the principle and features of fringing field capacitance sensor on the basis of analysis of traditional capacitance sensor's limitation.The subject apply cell integral method to deduce the calculation formula of interdigital capacitance sensor,and design the oil interdigital capacitance sensor.2. Design the hardware circuits of oil quality detection system. Analyse every functional module of the circuits and the anti-interference technology,establish hardware platform of detecting system.3. Use the 32-bit new type microcontroller arm cortex-m0 processor chip LPC1114 as the core processor,develop the software of oil quality detection system.The software is made up of the data acquisition of oil capacitance sensor and oil temperature signals,data processing,human-computer interaction module,etal.The subject complete the design of detection system prototype,and perform preliminary experiment with different frying time peanut oil.The experiment results indicate that the designed oil quality characteristics sensor and corresponding signal processing circuit and software can rapidly detect the frying oil quality,and has a good data reproducibility...
