The sugar content in the fruit is one of important guide line for weighing the fruit quality. The near infrared detecting technology is one kind of new nondestructive detecting technology which developed in recent years, and gets the broad application in industry and agriculture. It is one kind of method that using fruit specific property to the near infrared light such as absorbing, scattering, reflection and transmission etc to define the fruit composition. In this paper, sugar content in apple is detected by near infrared detecting technology.Based on the analysis and synthesis of present fruit measurement and its developing tendency, introduce near infrared technology to achieve the sugar content detecting in apple. Near infrared technology have many excellences such as fast speed, no need of chemistry dispose, and many components analyzed at the same time etc, and can achieve nondestructive detecting sugar content in apple quickly. This is the research object with'Fuji'apple, and according to the basic principle of near infrared detecting, research the detecting method of sugar content in'Fuji'apple.The main research works are as follows:(1)Based on the fundamental theory of NIR spectrum analysis, the paper researched spectral signature of apple and ascertained the character wavelength of sugar.(2)Based on experiments, the calibration model was established to predict the sugar content in the unknown apple sample.(3)The hardware part and software part were designed for the detecting system. The hardware part included near infrared photoelectric system and realizes the photoelectric conversion and disposal. The software part included the calibrating zero in system, the collecting and disposal of data, LCD displayand so on.(4)The system was tested and the result showed that using near infrared can detect the sugar content in apple.
