China plays an important role in producing soybean in the world, and is very rich in natural resources of phospholipid. About 1,600,000 tons of soybean oil are made in China each year, and more than 110,000 tons of oil by-products and 50,000 tons of natural phospholipid are produced, but most of them were used as low-grade soap and feed etc. The utilization rate is not up to 10%. At the same time, the fermentation and decay of the by-products brought heavy pollution to the environment. In order to apply natural phospholipid to more fields, a series of modified phospholipid was deeply studied in abroad and more products were developed. In our research, most of modified phospholipid was developed by the means of chemistry. It is not widespreadly used that the studies on enzyme-modified phospholipid with the nature soybean phospholipid as substrate.The hydrolysis was first studied by using the natural soybean phospholipid as substrate and with phospholipase Aa. The factors, such as technology of enzyme hydrolysis phospholipid, activities of emulsification of lysophospholipid, method of measuring the value of HLB, had been discussed with emphasis. The product of the modified phospholipid by enzyme has a good potential on being used in food, feed, cosmetic, medicine and so on. The study of enzyme-modified phospholipid is a very significant work. The results offered important data in industrialized measuring and producing of the enzyme-modified phospholipid. The results are as follows:The natural soybean phospholipid was first selected as substrate and the phospholipase Aa as the hydrolysis tool enzyme. The enzyme-modified phospholipid was studied by the means of quiescence reaction. In the optimum condition is enzyme dosage: 0.14%(w/w), CaCb: 0.03%(w/w), 7h of hydrolysis,50temperature 70 癈. In this condition the amount of free fat acid (FFA) is over 24.32ml, the transformation efficiency of can be up to 36.36%. The product is easy to de-oiled, it will be propitious to save energy source and reduce the cost.The method of testing emulsification of modified phospholipid at the optimum is: emulsifier 0.48%(w/w); emulsification 15 times; watching time 5h . The amount of emulsifier can be up to 29.18ml. The FFA has the significance with the lysophospholipid (PO.01) , the equation of regression is: Y=0.152X+13.677.Using Span-Tween as the standard of emulsifier. The results of HLB value of the standard oil and lysophospholipid by the method of emulsification are: cottonseed oil HLB 5.4; salad oil HLB 5.8; turpentine HLB 16.0. lysophospholipid HLB 8.0.
