In this study the biological dynamic Changes of 18 kumys samples,collected from Xilinguole pasture of Inner Mongolia, Were analysed. The results showed that the lactic acid bacteria and Torula growed most vigorously at 48-96br of kumys fermentation. Of that period, the peak of Zymocyte number was at 72br, the dominant species in the lactic acid bacteria was lactobacillus and the dominant saccharomycete was Torula with round or oval shape. During the full period from o~ to 168hr of fermentation of kumys, the numbe of zymocyte was at the lowest level and other biological activity indices didn't change greatly at the beginning for O-24br and in 48-961ir the number of Zymocyte reached the peak, up to 1.5 X 1O9CFU niT' and other biologicalactivity indices changesd greatly which included that the content of lactose decreased significantly, meanwhile the acidity and the content of free amino acids increased markedly ,alcohol was up to the summit and theconcentration of vitamin and trace elements were also at a higher level ; during the lattei period from l2Obr to 168br, the number of Zymocyte and the content of alcohol decreased , the concentration of lactose was up to the lowest level, whereas the acidity and the content of free amino acids remained a rising tendncy. In this stusy ,the genus of the lactic acid bacteria in the Zymocyte of Kumys was also verified. The experimental results indicated that the genera of the lactic acid bacteria was consested with Lactobacillus, Lactococcus and Entrerococcus; and the saccharomycete was Torula. It was also found that the Kuniys had a certain inhibitory effect on the growth of gram- positive Staphylococcus aureus and gram- negative Esch. coli (EPEC),of both, stronger on the former.
