Sensory and nutritional evaluation of cereal/amaranth mixtures as weaning food or enriched cereal for preschool children

The purposes of this study were (1) to develop protein-rich cereal mixtures consisting of corn, rice, and wheat supplemented with 40% and 50% A. hypochondriacus and A. cruentus grain flours with or without 10% non-fat dry milk powder (NFDM) and (2) to assess the sensory and nutritional quality of the cereal mixtures. Color, flavor, texture and over all acceptability of cereals mixtures were evaluated by 12 trained taste panel members (Chapter III). The consumer textural attributes of the four preferred cereal mixtures were further judged by the taste panel, and 26 parents of pre-school children. In addition, the acceptability of cereal mixtures were evaluated by 32 pre-school children (Chapter IV). The nutritional quality of the most preferred mixtures, wheat with two varieties of amaranth grain flours with or without NFDM was investigated in young growing, male Sprague-Dawley rats (Chapter V).;Findings and conclusions. The taste panel preferred cereal mixtures with 50% amaranth over the 40% with or without NFDM. Cereal mixtures with wheat were preferred over those with corn or rice. There were no significant differences in the textural attributes of wheat with A. hypochondriacus and NFDM, wheat with A. cruentus, and corn with A. cruentus and NFDM. Rice with A. hypochondriacus was, however, significantly different in texture from the other mixtures.
