In recent years,the research on Polygonatum is mainly divided into two directions: one is to use processed Polygonatum for direct consumption;the other is to extract active components from Polygonatum.The extracted dregs are generally discarded,and these wastes still contain a large number of functional components such as dietary fiber,which still have great potential in food research and development.In recent years,the concept of healthy diet has been deeply popular.The function of dietary fiber in preventing intestinal diseases,maintaining blood glucose stability,improving intestinal flora,preventing cardiovascular and cerebrovascular diseases,etc.,has made the development and research of dietary fiber food became a hot topic in the field of food.Biscuit,as a popular snack in the leisure food market.It is a new direction for the cookie industry to develop functional biscuits with conditioning effect by adding materials which are beneficial to human health.In this paper,the extract of xanthan polysaccharide was used as raw material,and the insoluble dietary fiber(HIDF)was extracted by papain and ?-amylase.The characteristics of the extracted HIDF and the waste were compared,and the function and physical and chemical indexes of HIDF were determined.HIDF was added to biscuit,and the best formula of the biscuit was determined by the texture detection.Finally,the digestion,physical and chemical indexes and microbial indexes of the biscuit were studied.The HIDF extracted in this paper has good structure and physical properties,which is suitable for processing the functional food.The Yellow essence dietary fiber biscuit also shows good functional properties,in order to provide reference for improving the utilization rate of yellow essence waste and further mining nutritional value.The main contents and conclusions of this paper are as follows:(1)The best extraction technology of HIDF was determined.The optimum production conditions were obtained by single factor and response surface experiment.The optimum production conditions were: material to liquid ratio m/v = 1:20,papain addition 0.125%,temperature 52 ? enzymatic hydrolysis time 2 h,?-amylase addition 0.3%,temperature75 ? enzymatic hydrolysis time 2 h,and then drying the residue at 60 ? for 6 hours.The extraction rate of HIDF can reach 52.184% after optimization of response surface(2)The study of the characterization of HIDF and xanthan waste was carried out.XRD results show that the characteristic diffraction peak of cellulose type I is more obvious than that of xanthin waste.SEM shows that HIDF has more spiral fiber bundles and cavities,and the space is reticular and porous.FTIR showed that HIDF had more cellulose and hemicellulose than xanthan waste.(3)The antioxidant of HIDF.The DPPH removal rate was the highest when the concentration of HIDF was 4%,reaching 90.5%.(4)The function properties and physical and chemical indexes of HIDF were determined.The results were as follows: the holding capacity of HIDF was(5.99 ± 0.05)g/g,the holding oil force was(3.965 ± 0.035)g/g,the swelling force was(4.565 ± 0.047)m L/g,the fat content of every 100 g of HIDF was 3.11±0.12 g,protein content was 0.63±0.03 g,water content was 4.52±0.28 g,ash content was 2.65±0.17 g.(5)The best technological formula of the biscuit was determined.The optimum production conditions were obtained by using single factor and orthogonal experiment.The optimum production conditions were as follows: the flour was 100%,the amount of HIDF was 5%,butter 30%,sugar 10%,xylitol 10%,egg white 30%,baking soda 2.5%,salt 1%,monostearate 0.3%;oven temperature was 160 ?,lower tube 140 ?,baking 18 min.(6)In vitro digestion of the Yellow essence dietary fiber biscuit.The results showed that dietary fiber could effectively inhibit starch digestion.(7)The results were as follows: the fat content of every 100 g of yellow fiber biscuit was19.4±1.64 g,protein content was 7.8±0.87 g,water content was 3.96±0.79 g and ash content was 1.76±0.38 g.The total number of colonies was 360±36.6 CFU/m L,and the mould 3±0.54 CFU/m L,no E.coli and pathogenic bacteria were detected.
