"People take food as the sky".Food safety has always been a concern in today's society.Pork is a frequent visitor to people's tables.Pork quality and safety are closely related to the lives of each of us.The main factors affecting pork quality and safety Existing in every link of the pork supply chain,improper control of any link may cause pork quality and safety problems.The scientific and efficient identification of risk factors in the supply chain is a problem that the pork industry needs to solve urgently.The main work of this paper is as follows.(1)Combine the characteristics of the pork supply chain link and the method of judging the key control points in the HACCP system,conduct a potential hazard analysis on each link of the pork supply chain,analyze its potential microbiological,chemical and physical hazards,establish multiple levels and multiple The index of pork quality and safety system uses the principal component analysis method to conduct a secondary screening of the initially established index system to obtain the final index system.Combined with the extension evaluation method to calculate the weight value of each index factor of each link,and then carry out multi-level extension evaluation of each link.(2)On the basis of the established index system,the original data of the evaluation is obtained through the form of table scores,the risk assessment algorithm based on the improved DBSCAN-HMM model is established,the model calculates the risk value of the index factors,and selects the sales link in the supply chain For example,the real-time real risk state under the observation state is obtained through model calculation,and the corresponding risk value at each moment is obtained through cost simulation.The experimental results obtained dynamic real risk value at each observation moment,which improved the risk retention problem in static risk assessment.(3)The design and implementation of the system platform,this article uses the C#programming language,using the database SQL Server 2008,designed and developed a pork quality and safety risk assessment and early warning system.The system has a certain early warning effect on the quality and safety of pork,to a certain extent,reduces the quality and safety problems of pork,and can effectively avoid the occurrence of similar incidents.
