| Wenchang Chicken is the most of famous dishes in Hainan.With the continuous improvement of its production performance,there are problems such as the decline of meat quality and excessive deposition of body fat.Some studies have shown that fermented feed can effectively reduce the abdominal fat deposition of broilers,but there is no report about the effect of fermented feed on the abdominal fat deposition and fat metabolism of Wenchang chickens.Therefore,this study take advantage of Wenchang chickens as the experimental materials,and analysis the effect of different proportion of fermented feed on the fat deposition and fat metabolism of Wenchang chickens during the fattening period,which is the response of fermented feed in the diet of Wenchang chickens To provide theoretical basis.The main results of this paper are as follows: 1.Effect of fermented feed on slaughter performance and meat quality of Wenchang ChickenOne hundred and sixty 113 day old Wenchang chickens were randomly divided into four groups(1,2,3 experimental group and control group)according to the principle of similar body weight.Each group was divided into four repetitions,10 chickens each.The control group was fed with traditional full price feed,and the 1,2 and 3 groups were fed with 10%,20% and 30% fermented feed for 49 days.The slaughtering performance and meat performance of the control group were tested after the feeding experiment.The results showed that the control group was lower than those of the 1,2 and 3 groups in chest muscle weight,chest muscle ratio,leg muscle ratio,full clean bore and slaughter weight,but the difference was not significant(P > 0.05),indicating that the fermentation feed had no significant effect on the slaughtering performance of Wenchang Chicken.There was no significant difference in cooked meat rate,water loss and water content between the control group and the experimental groups(P > 0.05).2.Effect of fermented feed on body fat distribution of Wenchang ChickenThere was no significant difference in abdominal fat weight,liver weight and liver rate between the control group and the experimental groups(P > 0.05).Compared with the control group,the abdominal fat rate of the chickens in test 1 and 2 group was slightly lower,but the difference was not significant.Compared with the control group,the abdominal fat rate of the chickens in test 3 group was significantly lower(P < 0.05);compared with the chickens in test 1,2 and 3 group,the differences in the thickness of the leg muscle fat,chest muscle fat and subcutaneous fat were not significant(P > 0.05);the liver fat of the chickens in test 3 group and the control group were not significant(P > 0.05)Compared with the control group,there was no significant change in liver crude fat(P > 0.05).The results showed that feeding a certain proportion of fermented feed can significantly reduce the abdominal fat rate of Wenchang Chicken.3.Effect of fermented feed on blood biochemical index and key enzyme activity of fat metabolism in Wenchang ChickenNine blood biochemical indexes including triglyceride,total cholesterol,high-density lipoprotein cholesterol,low-density lipoprotein cholesterol,total cholic acid,total protein,albumin,blood glucose and very low-density lipoprotein were determined.The results are as follows: There was no significant difference in TG content in blood between the experimental group and the control group(P > 0.05).TG content in blood of the experimental group was significantly lower than that of the control group(P < 0.05).There was no significant difference in total bile acid between the experimental group and the control group(P > 0.05).The total bile acid content in blood of the experimental group was significantly lower than that of the control group(P < 0.05)There was no significant difference(P > 0.05)between the low density lipoprotein in the blood of group 1 and group 2 and that of the control group(P > 0.05).The low density lipoprotein in the blood of group 3 was significantly lower than that of the control group(P < 0.05).In addition,there was no significant difference in cholesterol,high density lipoprotein,total protein,white protein,blood glucose and very low density lipoprotein between groups 1,2 and 3 and that of the control group.Compared with the control group,the activity of Fas in the liver of the three groups decreased significantly(P < 0.05),and there was no significant difference between the two groups(P > 0.05);the activity of ACC in the liver of the three groups increased slightly but did not reach a significant level(P > 0.05);Compared with the control group,the activity of CPT1 in the tissues of group 1,2 and 3 was increased,but it did not reach a significant level(P > 0.05);compared with the control group,the activity of LPL in the fat group of group 1,2 and 3 was decreased,but there was no significant difference Compared with the control group,the activity of ATGL increased by 1.12iu/l in the first group,decreased by 2.13iu/l2.35iu/l in the second group and the third group,but the difference was not significant(P > 0.05).4.Effect of fermented feed on the expression of key genes regulating Fas enzyme synthesis in liver of Wenchang ChickenCompared with the control group,there was no significant difference in the expression of Ch REBP between the 1 groups,2 groups and 3 groups of chicken liver(FAS > 0.05).Compared with the control group,there was no significant difference in the expression of LXR between the 1 groups,2 test groups and 3 groups of chickens in the control group(P > 0.05),which was the key gene for the regulation of FAS enzyme synthesis(FAS > 0.05);compared with the control group,the test 1 There was no significant difference in the expression of SREBP gene between the 2 groups and 3 groups of chickens in the control group(P > 0.05)for the regulation of FAS enzyme synthesis.Conclusion: the results of this study show that fermented feed can reduce the abdominal fat deposition of Wenchang Chicken by regulating the activity of fatty acid synthetase. |
