With the development of China's fishery,the output of aquatic products has been increasing year by year,among which fresh water fish resources are more and more abundant.Fresh water fish is also a high quality protein resource advocated by the world health organization.As fresh products can better retain the nutrients of fresh water fish,consumers are increasingly fond of them.Because of the different degrees of deterioration in the fresh-keeping process of fresh products,it is particularly important to study the effective fresh-keeping technology.In this paper,the preservation effect of high-pressure homogenized chitosan on refrigerated grass carp slices was investigated through fish fillet storage experiments,taking physicochemical indexes,tissue structure,microbial spoilage and protein changes as indexes,so as to provide theoretical basis for the practical application of efficient fish product preservative and evaluate its application value in pre-product preservation.In this paper,fresh water grass carps were selected as research objects.Their fish were treated with homogenized chitosan,chitosan and water(control group)respectively,and stored at 4?.The number of days of the measurement index is 0,1,3,6,10 and 15.Then the pH value of the grass carp fillet during storage,quality and structure,a water-based,chromaticity,water activity,sensory evaluation,the total number of colonies,psychrophilic bacteria changes,changes produce sulfur bacteria,enterococcus,change of lactic acid bacteria,water soluble protein content changed,salt soluble protein content and TCA soluble peptide,TBARS and TMA experiment research.It was found that during the storage of grass carp,the quality of grass carp slices decreased continuously from 0 to 15 days.After the experimental treatment,the quality of the experimental group was improved compared with the blank group,whether from the whiteness,hardness,sensory quality of fish,the number of fish microbial growth and reproduction during the storage process,or the changes of fish protein.In the experimental group,the high pressure homogeneous group of grass carp fillets compared with the homogeneous group of grass carp fillets,the storage of grass carp fillets preservation effect is more significant.It obviously slowed down the surface deterioration of grass carp fillets,and effectively inhibited the growth and reproduction of cold-loving bacteria,sulfur producing bacteria and enterococcus.In addition,the process of protein degradation was slowed down.At the 15 th day,the freshness of grass carp fillets in the high-pressure homogenization group was significantly higher than that in the other two groups.From the experimental data,it can be obtained that grass carp fillets processed by high pressure homogenization coating can achieve better preservation effect.
