Food safety is closely related to everyone's health,life,and work.Food safety not only affects personal life,but also relates to social harmony,stability,and sustainable economic development.In the food industry chain,the catering industry is the last link with consumers,therefore food safety in the catering industry is very important.This paper conducted questionnaires of catering service employees and consumers in Dongshan County.The survey included food safety knowledge,attitudes to food safety issues,and food safety practices.A total of 612 valid questionnaires were collected for catering service employees.According to statistics,the proportion of health certificates held by catering practitioners in Dongshan County was 89.1%.The education level of employees in primary schools,secondary schools,colleges,and universities was 20.1%,32.7%,39.9%,and 7.3%respectively.The proportion of 1,2,and 3 training times for employees participating in catering safety training were 50%,30.1%,15%.And 4.9% of the employees did not participate in the training and education related to food safety throughout the year.The questionnaire reflected that there were some loopholes in the supervision of the supervision department.There has not established a scientific and effective training and assessment mechanism for the catering employees and training is insufficient.A total of 612 valid questionnaires were collected from the Dongshan County consumer survey.The main place for Dongshan County residents to purchase seafood products was the food market,with a proportion of 45.8%.When buying seafood products,the items concerned were freshness,shelf life,price and taste.The attentions of each item were 70.3%,20.4%,5.4% and 3.9% respectively.Seafood poaching with boiling water was the most popular way of cooking,with a ratio of 55.9%.98% of the people get information about food safety through the network.55% residents were very satisfied with the food safety in Dongshan County,while 5% of the residents were dissatisfied with the food safety in the market.When dealing with food poisoning,10.9% of the population chose to accept silently,indicating that some people lack legal awareness.According to the questionnaire,it was reflected that Dongshan consumers paid more attention to the freshness of seafood products,and they were concerned about food safety information,but their awareness of rights protection need to be improved.The test data of rice,vegetables,fruits,edible oil,seafood,tableware and drinking water were collected in Dongshan County from 2015 to 2017.The total number of samples in the pastthree years were 1229,1293,and 1525,respectively.The qualification rates were 92%,91.7%,93.6%.The types and items of unqualified food were carbofuran in vegetables,chloramphenicol in seafood,coliforms in tableware,and total bacterial count in drinking water.It was showed that there were certain hidden dangers in the food safety of Dongshan County.At the same time,it also reflected the lack of design projects in the sampling management of the supervision department,and the problems of failure to improve and lack of supervision force after the discovery of the problems.By analyzing the data of 5 food poisoning cases in Dongshan County in 2013-2017,it was shown that the food poisoning in Dongshan County was mainly caused by bacteria and tetrodotoxin.The majority of food poisoning events occurred from June to October,mainly due to bacterial food poisoning caused by consuming seafood.Common foodborne pathogens were Vibrio parahaemolyticus and enteroinvasive Escherichia coli.The application of HACCP system in A hotel in Dongshan County was investigated and analyzed in the field.By establishing HACCP group and implementing the detailed rules of HACCP management,the hazard analysis and identification were carried out in the procurement and acceptance of raw materials,the storage of raw materials and food processing,and the critical control points were made in the A hotel.Through the implementation of HACCP,A hotel has strengthened personnel training and strengthened food safety management measures.In view of the deficiencies in food safety situation in Dongshan County,the strategies for improving food safety supervision in Dongshan County were put forward.It was recommended to increase the use of the HACCP system,strengthen joint inspections,increase sampling efforts in the catering industry,increase catering special rectification efforts,publicize and popularize catering knowledge,speed up the construction of information sharing platforms,take measures to prevent food poisoning,and do preventive supervision work.It could provide references for food safety supervision in catering industry in Dongshan County.
