Perilla is a dual-use plant approved by the Ministry of Health of China.It has been planted for more than 2,000 years in China,and it has a wide planting area and a wide range of planting areas.Perilla seed oil is one of the world's highest a-linolenic acid vegetable oils.It is an important component of human brain cells and tissue cells and plays an important role in human health.Perilla has a wide range of applications and is involved in many fields.In recent years,more and more researchers have paid attention to the resources of Perilla,and its related product development and utilization has become a hot spot in the world.In this paper,perilla seeds in six regions of the country were selected as experimental alternative materials.The oil yield and the relative content of a-linolenic acid were used as reference materials.Finally,Heilongjiang perilla seeds were used as raw materials,and the oil enzymatic method was applied to the oil extraction process.The study explored and compared the process with Soxhlet extraction,solvent reflux and microwave assisted methods.The water enzymatic method has the advantages of mild processing conditions,simple operation and low safety hazard.Finally,the parameters of the optimal extraction process of the water enzymatic method were determined,and the physicochemical properties,fatty acid content and antioxidant resistance were systematically studied.The main findings are as follows:Using Heilongjiang Perilla grain as raw material,the protease was selected as the test enzyme preparation,the pH was determined,and the factors such as enzyme addition amount,enzymatic hydrolysis temperature,enzymatic hydrolysis time and liquid-solid ratio were used to study the perilla seed by response surface CCD-center combination design.Oil-water enzymatic extraction process.Get the best extraction process conditions:alkaline eggs.The white enzyme was at pH 9.5.Lower liquid(mL)solid(g)ratio 5.37:1,plus enzyme.The amount is 1.57%and the temperature is 56.92?.At 4.76 h,the average extraction rate of perilla oil was 35.86%,which was very close to the theoretical value of 36.6%.The oil residue was extracted twice by the optimal process,and the extraction rate was 3.23%.The total extraction rate of the final aqueous enzymatic method was 39.09%.Apply water.The resulting purple color was extracted enzymatically.Su seed oil color.Ze Cheng.Clear and transparent,the quality is excellent,and the resulting oily scent is extracted relative to the solvent.The gas is more concentrated.Considering the comprehensive consideration,the water enzymatic process is superior to Soxhlet extraction,solvent reflux and microwave assisted method.It is a new process technology with mild extraction conditions and no pollution.The physicochemical properties and composition of perilla seed oil were detected by reference to national standard method and GC-MS.The extraction of perilla seed oil by aqueous enzymatic method had no effect on the composition and content of fatty acid,and the content of unsaturated fatty acid was measured.It is higher,accounting for 87.23%,and its physical and chemical changes are in line with national standards.In the anti-oxidation study,the effect of different concentration gradients of carnosic acid on the stability of perilla seed oil was studied by accelerated oxidation test,and the lateral contrast was compared with the antioxidant capacity of antioxidants(BHA,BHT and TBHQ).Investigating the antioxidant properties of carnosic acid,it is finally found as an antioxidant in added foods,which has a good protective effect on the storage of perilla seed oil and has the potential to replace artificial synthetic antioxidants.Comprehensive consideration,perilla seed has important applications in food,medicine,etc.,and its oil has a high content of unsaturated fatty acids,which is very beneficial to human health,so that the full development and utilization of perilla resources is very good.development of.
