Natural casing is one traditional use of large-scale products in meat products industry,the majority of domestic production of casings were exported to the international market.As natural casings retailers,wholesalers and sausage producers are increasingly demanding quality safety and reliability.Laws and regulations of the increasingly sound and strict,product supply chain globalization,the establishment of a set of standards in line with the quality and safety of all regulatory system,in the natural casing processing enterprises have been imperative.IFS(International Food Standard)is an international standard for food retailers,wholesalers,manufacturers to provide evidence-based audit,in accordance with its management system,related enterprises make management and implementation of food production,not only can meet the quality and safety requirements of all parties,but also can weaken the impact of foreign trade barriers.In the consolidation of the existing sales market at the same time,to open up new casing sales market to broaden sales channels.In this paper,the application of IFS standard in natural casing industry is introduced.According to IFS standards and the relevant laws and regulations of natural casings at home and abroad,combined with the actual situation of A Company and repeated ver:ification,set a scientific and complete quality safety management system which is applicable to casing,production and processing enterprises.Drawn salted hog casings production process flow chart.The potential hazards during processing of salted hog casings were identified,risk assessment and analysis,preventive measures were carried out,and make sure three critical control points:Salting,brine preparation,curing period,and identified the key restrictions and monitoring measures,and developed a HACCP plan and operational prerequisite programs,the elimination of food safety hazards,reduced to an acceptable level.At the same time,through th ree aspects of resource management,product realization and measurement,analysis and improvement,all-round guarantee of product quality and safety.According to A company's quality and safety objectives achieved situation,validated the effective implementation of the quality and safety management system.In addition,according to the official,customer and certification company's inspection or audit,the successful opening of the German and other EU retailers market Sale the product to the major supermarkets,broken the sales cha nnels,these also verify the IFS standards established quality and safety management system is effective.
