With frequent occuring of food safety accidents,it is urgent to establish and promote the economic and effective food safety guarantee system.The Hazard Analysis and Critical Control Point(HACCP)is a preventive system focused on food safety management which is widely used in food industries worldwidely.HACCP system is not an isolated system because it has to established based on a series of prerequisite programs.This thesis researched the establishment and application of HACCP system on the production process of Frozen Drinks(Vanilla ice cream cone),which is based on Good Manufacturing Practice(GMP),Sanitation Standard Operation Procedure(SSOP),Raw Material and Package Material Safety and Health Guarantee Procedure,Maintenance Plan,Identification and Traceability Plan,Product Recall Plan,Emergency Plan.This thesis successfully made the actual processing flow diagram for Hazard Analysis on the biology harm,the chemical harm,the physical harm and the Allergen harm.Five Critical Control Point(CCP)were established,such as acceptance of raw materials,filtration,sterilization,toning and frozen.The Critcal Limits(CL)and monitoring procedure for each CCP was established.Then the validation procedure for the monitoring of CCP and HACCP system was also made.The results of these procedures dearly showed that HACCP system can effectively control the quality of Frozen Drinks.
