With the increase of people's living level, manufactured meat is especially important for people's life. However, during the processing of manufactured meat, there are many unsafe factors. The alarm, over safety problems of foods, exists all the time. To solve safety problems is concerned by government and society. Therefore, it is of theoretical and practical significance to launch safety research on manufactured meat. In the thesis, based on elaboration of manufactured meat, through hazard analysis on producing, processing and marketing, safety control model on integration of manufactured meat is established, which not only can guarantee the safety quality and manage critical points of producing and processing, but also enables to pre-estimate and track safety quality problems, which makes for confining the damage range of food-borne diseases and protecting people's life.In this thesis, radio frequency identification (RFID), hazard analysis critical control point (HACCP) and fuzzy-analytic hierarchy process (FAHP) are used to research HACCP system of fat-stock's cultivation and manufactured meat's processing. According to the background of systematic application field, from the angle of regulation environment, hazard analysis on integration of manufactured meat is made, safety control model over producing and processing manufactured meat is constructed; the hazard critical control point is analyzed; through application research, the needed measures on safety controlling are proposed.The main specific work and conclusions include: 1)on-site research on processing manufactured meat is made in enterprise Tangrenshen, utilizing RFID technology, HACCP system is constructed to mainly analyze hazard critical points of processing, afterward, appropriate defensive measures are put up with; 2)taking use of RFID technology, individual fat-stock is tagged and tracked, state data of process, from cultivation, supervision, slaughter to marketing, are recorded. based on the recorded information, the targets of critical control points are controlled and managed, which include analysis the related standard system and practical technology;3) during practical application, safety control model is researched with hierarchy analysis and safety assessment; 4) feasibility of the method is verified with practical application in a certain enterprise.
