Wine culture in China has a long history,and wine is an indispensable element in business and social activities.A small or moderate amount of alcohol can promote blood circulation,but excessive drinking can also cause many diseases.In addition,there is a difference in alcohol tolerance because of the individual physique.Alcohol dehydrogenase activity plays an important role in the metabolism of alcohol,and the mechanism of alcohol dehydrogenase is an inhibitor of ethanol gastrointestinal absorption and a metabolic enhancer.In addition,the enzyme hydrolysated protein is cut into a small segment of the protein peptide,which can effectively reduce the concentration of alcohol in blood.In this paper,a compound beverage with fish gelatin polypeptide and three kinds of Chinese herbal medicine extracts was used as the raw materials to develop a compound beverage with alcohol dehydrogenase effect,the activation effect,sensory and physicochemical indexes of alcohol dehydrogenase,and the small test test and small test amplification test were carried out.The sobering effect of Chinese herbal medicine is also fully exploited and utilized for fish gelatin.On the basis of the research,a preliminary design of the annual output of 4000 tons of sobering beverage factory was carried out to provide reference for industrial production of sobering beverages.The main contents are as follows:(1)The effects of three kinds of plant extracts on the sobering effect and the best matching scheme were studied.The activation of extract of radix puerariae,cassia seed and Schisandra chinensis on ethanol dehydrogenase was investigated with the activation rate of ethanol dehydrogenase,and the optimum addition of three kinds of plant extracts at the time of combination were investigated.The experiments showed that the activation rate of ethanol dehydrogenase was the highest: the three extracts of the compound were 0.2%,0.18% of cassia seed extract and 0.13% of Fructus Schisandrae extract.(2)The scheme of the rehabilitation of sober drinks was studied.The effect of compound ingredients,sugar and citric acid on the sensory quality of the beverage was investigated by fuzzy mathematical sensory evaluation.The beverage formula with the highest color,tissue state and flavor comprehensive score was obtained.The final formula was 0.51%,citric acid 0.025% and white sugar 3%.(3)The factory is designed for 4000 tons of sober drinks.The general plan of the factory,the production process flow chart and the workshop plan are drawn.The product index,production plan,material,energy,equipment selection and pipe diameter in the beverage production line are clearly explained or calculated.Among them,the total investment of the project is about 12.44464 million yuan,the annual cost is27.2992 million yuan,the net profit of the enterprise is 5.8056 million yuan,the net profit rate is 16.59%,and the investment risk of this project is small.
