Meat is the foundation of human survival and development as a protein, fat and vitamins origin. Concomitance with economic development caused the environment and food pollution, such as agricultural chemicals leftover, and heavy metal pollution and so on. Also, in recent years frequent food safety problems cause more and more social public attention, clenbuterol events, escherichia coli 0157 etc. As a big country meat consumption, import a lot of meat products each year. Therefore, it is of very important for us to carry out researches of inspection and quarantine risk analysis and managerial module for imported meat, which can further normalize and improve the quality of our work and raise supervision level for imported meat, prevent the foreign animal epidemics from penetrating into our country, protect the safety of agricultural and animal husbandry productions of our nation, ensure consumer’s health and the safety of imported meat. Specific content and the results are as follows:1、The present situation of jiangsu province imported meat trade analysisAnalysis meat import trade current situation of Jiangsu province. The number of imported meat products increased year by year in Jiangsu province in recent five years, especially in the last 2011 years import meat trade increased by 256%, pork importation dominated, beef and pork imports are fast growth, while poultry imports reduced year by year. Look from import source, meat importers source were varied, mainly including the United States, Argentina, Australia and some European countries. According to the classification of the meat products importing countries also have great differences between them. With the number of meat import products increasing year by year, safety issues are becoming increasingly prominent. The statistical data showed that:in the past five years, in addition to import beef untested out the rejected batches, pork and poultry imports were seized more than a rejected batches.2、Imported meat products inspection and quarantine risk factors weights analysisBased on high risk, many detection item, export cost high, slow speed of the present situation of imported meat products, integrate the problems of inspection and quarantine risk factors control of jiangsu province. Through the analysis of the product category, the production processing area, test items and test equipment, the production processing plant quality system, system standard, commodity inspection, and export credit policies and regulations and historical experience, in the process of inspection and quarantine of risk factors that may be associated with them classified. According to the design principle of the risk index system, concluded the jiangsu province imported meat inspection and quarantine risk factor weight coefficient.
