Mulberry(Morus app.) is the kind of tree to product mulberry fruit, they are moraceae Morus perennial deciduous trees or shrubs.Traditional mulberry utilization pattern is picking leaves for rearing silkworm as the main means, often ignored the use of mulberry fruit. Along with scientific and technological progress and people health consciousness gradually improve, mulberry of rich nutrients and a variety of health care function has attracted the attention of the people.This study choose 32 samples of mulberry fruit from Zhenjiang mulberry sericultural institute, Chinese academy of agricultural sciences national germplasm resources nursery as material, through morphology, physical and chemical testing, antioxidant effect, using the system clustering analysis, variance analysis and other analytical method for the evaluation and research.The main results were as follows:1. Different mulberry varieties during the mature component change rule and oxidation resistanceIn addition to the fruit shape index and water, other indicators are presented as the harvest time consistent upward trend.Violet black mulberry fruits’(Da 10 and Zhngshen 1) fruit diameter,fruit length,fruit shape index,fruit weight are significant higher than milky white mulberry fruit species(‘2010140004’ and ‘Lvshenzi’); Milky white mulberry fruits’ PH, total sugar, reducing sugar content are significant higher than violet black mulberry fruit species(P<0.05).The indicators become more and more significant difference as fruit mature.Mulberry fruit mature process, the active ingredients such as flavonoids, total phenols content increasing, in the late mature process, anthocyanins of synthesis, content of active ingredients to achieve maximum violet black(milky white) content.Preliminary sure mulberry color difference, on the one hand is due to the increased with the increase of maturity, chlorophyll gradually degradation, its synthesis of anthocyanins content accumulation, on the other hand is due to the increasing mulberry p H, lead to anthocyanins color changed.Under the condition of without considering percentage of bear fruit, violet black mulberry fruit’s economic value is higher than the milky white mulberry fruit’s.2. The influence of different pretreatment methods on mulberry qualityCompared with fresh mulberry fruit, mulberry fruits’ quality got by five different processing method have varying degrees of decline;Treatment effect from high to low order as: frozen(-20℃) > 80 drying > sun drying > 60 ℃ ℃ drying >100 drying.℃Comprehensive various processing methods of cost, time and effect, drying is best suited way to satisfy the needs of the industrialized production. Therefore, further investigation of different temperature of the air drying influence mulberry fruit on active ingredient and the oxidation resistance, 80 ℃drying mulberry extract, the active ingredientcontent and oxidation resistance is superior to the drying of 60℃ drying,100℃drying.80 ℃drying has best mulberry effect, low cost and suitable for industrial production.Frozen and sun drying can also save the quality of fresh mulberry, suitable to serve as the important supplement of fresh mulberry.3. 32 mulberry varieties of mulberry quality comprehensive evaluation32 germplasm resources of fruit length to diameter is 1.802 ~ 4.096 cm, simple fruit diameter 0.94 1.786 cm, weight of 0.943 ~ 5.914 g.Fruit color, 2010140004, s. Ambrogio, Gucun 3,Shanzhuang 1,Subaishen,Lvshenzi, a total of six varieties, and the rest are purple or violet black.Because, mulberry planting age is small, the overall yield is low.But, in general, the largest and heaviest weight of the fruits of J33, ten times.J33 highest economic value in the whole fruit mulberry varieties, the average fruit weight, fruit length to diameter, fruit diameter are bigger.From the fruit color into consideration, Sue white Shen is milky white, can reduce the machining process, the pigment processing, and the quality indexes of related testing effect is good.According to the traits of 15 indexes of Q type cluster analysis, six ivory fruit mulberry varieties(2010140004, s. Ambrogio, Gucun 3,Shanzhuang 1,Subaishen,Lvshenzi) bound for a category, that is derived from the germplasm resources of the same color quality is near;Material quality is far from a different color.Fruit mulberry germplasm genetic background is relatively rich, different regions, different varieties in plant, leaf morphological characteristics, female flowers characteristics of rich morphological differences.By type R cluster analysis, we can see that the selected 15 indicators have a certain correlation between.Europe type, the smaller the genetic distance, the higher the correlation between the various indicators, which based on the analysis of these factors will appear when the heavy weighted situation, will affect the accuracy of the results.So, when Q type cluster analysis, should be in guarantee under the premise of information, and will be of significant correlation indicators comprehensive for the quantity is less, but independent factor analysis.
