Camellia seed oil and its products has important applications in the field of food and medicine, and the exploration of camellia seed oil and seed meal protein extraction technology has important application significance.Camellia seed was studied in this study.Pectinase was selected as the best enzyme from a variety of hydrolytic enzymes,the best condition of pectin enzyme to extract tea seed oil were identified;The physical and chemical properties of the oil obtained by aqueous enzymatic extraction of oil, solvent extraction and pressing process were compared;The single factor level of protein extraction from camellia seed meal was studied, and the functional properties of the extracted proteins were evaluated.The main results are as follows:(1) The effect of pectinase was considered to be the most significant, amylase and cellulase times, β-xylanase was weakest in the comparison of four kinds of enzyme preparation. Using the response surface method was used to get the oil extraction rate and regression model of the relationship between the amount of enzyme, reaction time, temperature, fitting degree of the model is good, small test error can use this model to analyze and forecast aqueous enzymatic extraction results of camellia seed oil. The optimum conditions were: the addition amount of the enzyme was 1.8%, the time of 4.2 h, the temperature was 46, the test value was 85.79%, and the experimental results were in agreement with the theoretical predictions.(2)The physical and chemical properties of enzymatic water, solvent method, squeezing the refining method of extraction of tea seed oil were compared. Acid value, peroxide value, iodine value, saponification value, moisture and volatiles of aqueous enzymatic extraction of camellia seed oil were thought to have reached the national standard, its quality was similar to refining of camellia seed oil, solvent extraction of camellia seed oil of moisture and volatile matter content is higher. The relative contents of unsaturated fatty acids were all around 90% in three kinds of camellia seed oil.(3)Through L9(34) orthogonal experiment, the optimum extraction process of alkali soluble acid precipitation method for extracting oil from camellia seed meal was as follows: pH value of 10, extraction time of 80 min, extraction temperature of 50℃, 1:16 of solid-liquid ratio. Under these conditions, the extraction rate of camellia seed meal protein was 48.78%.(4)Camellia seed meal protein isoelectric point was around PH 5 and easy to be Soluble in alkaline conditions, and the solubility was best at 50℃.There was a certain relationship between foaming and foam stability and emulsifying and emulsifying stability of camellia seed meal protein and the concentration of protein and the solution pH. The foam stability was best, the holding water was very low, protein emulsification was the worst at the pH 5.
