Cationic modified hydrolyzed gelatin has conditioning function as natural protein and can easily be adsorbed as quaternary ammonium salt. It can be widely used in hair care products. As a consequence, using edible gelatin as raw material, soluble molecules hydrolyzed gelatin are prepared by enzymes process. The polypeptides are reacted with cationic agent to synthesis cationic modified hydrolyzed gelatin.(1) For soluble molecules hydrolyzed gelatin is prepared by enzymes, this paper researches the reaction process of papain products and the molecular weight distribution of the product. The effects of pH value, hydro lyzing temperature, enzyme dosage, substrate concentration and reaction time were studied, to obtain the optimum conditions:substrate concentration 5%-10%(w/v), pH value 7.0, enzyme dosage 0.20%-0.03%, hydrolyzing temperature 60℃, reaction time 60min. By GPC analyzing the hydrolyzed gelatin protein determined molecular weight distribution. When substrate concentration of product is 5%~10%(w/v), the number-average molecular weight distribute in 2000-6000D. This product to meet with hair hydrolytic protein requirement.(2) The Cationic modified hydrolyzed gelatin was divided into two steps. We discussed the best condition for all the steps. The first step is reaction of ring closure. Add 50% NaOH of alkaline in 3-chloro-2- hydroxypropyl-three methyl chloride cyclized reaction, control the end pH 10.0, at 30-40℃react for about 1 hour. The second step is the reaction of cationic modified hydrolyzed gelatin. The mole ratio of materiel controlled at n (etherification intermediates): n(hydrolyzed gelatin)=1.1:1, pH value 10.0-11.0, reaction temperature 60℃, reaction time 2 hour.Finally, the structure of the target product was characterized by FT-IR, the critical moisture content, foamability and adsorbability of the target product were determined. After modification of gelatin cation, through thermogravimetric (TG) determined moisture content and combine type. Ross-Mile tested foamability and foam stability. Measure the target product absorbability by a simple test application.
