This paper mained focused on the isolation, purification and characterization of polysaccharide from Vitis Linn, using polysaccharide abstractiondeputation technique, instrumental analysis technique. Antimicrobial Activity and anti-oxidation effects of crude polysaccharide and the fractions were also systematically studied. The main results were shown as follows:1.Isolation,purification,characterization and constitution of Vitis Linn polysaccharide(VLP) Through the research of VLP abstraction and purification, we found that VLP can be got by water extractingandalcohol precipitating,degreasing, eliminatingalbumen with the method of Sevag, dialysising and freeze drying from grape .We got eight fractions VLP from two kind of grape through the Sephadex A-25 chromatography, it showsthat the VLP of the eight fractions have not protein and monosaccharide through examination.According to Gas Chromatography analysis, the eight fractions can be testified that they all contain different quantities of arabinose, mannose,glucose, galactose, rhamnose and xylose,in addition,VLP-B4 also contains xylose, VLP-H4 also contains rhamnose.2. The study of the antimicrobial activity function of VLP Antimicrobial activity of VLP were tested against 3 bacteriums in food for the firsttime.Results showed:there had stronger antimicrobial effects to E.scherichia coli than Bacillus sttbtilis except Staphy lococctts attretts.To the same kinds of grape, the antibiotic activity Was enhanced with the increase of avexage molecular weight of VLP;to diffent kinds,the white grape's the antibiotic activity is better than the red. The study is about the inhibition effect of VLP against the medium baterial count,bacillus,thermophilic bacillus from the fresh milk.VLP had significant inhibitant activity against the medium baterial count,but VLP in the milk had marginal inhibitant activity agains antimicrobial activity t the bacillus,thermophilic bacillus.3. The study of the anti-oxidation effect of VLP The study on anti-oxidation of VLP was carried out by POV as an index. The results showed that: VLP has anti-oxidation to plant oil.Experiments of anti-oxidation with mixation of different anti-oxidation into oil indicated that combination of 0.05% VLP with 0.05% VC performanced high anti-oxidation.
